Recipe and scoring video. Timelapse of the steamy part of the bake will be up soon. I have lowered the hydration a bit this time. The dough felt a lot easier to handle including scoring. Ingredients: 350 gr water (75% total) 250 gr bread flour (13% protein) 150 gr all purpose wheat flour 75 gr kamut wholegrain flour 25 gr whole wheat flour 100 gr levain (100% hydration - 70%bf/30%rye flour) 11 gr salt + 10 gr water (The bottom is sprayed with water and sprinkled with sesame seeds and dried crushed corn. The top is dusted with a mix of rice and bread flour) Method: Mix all the flours with 350 gr water and let it autolyse for 2 hours. Add 100 gr active levain and mix it shortly. Let it rest 30 min before you add 11 gr salt with 10 gr water. I used a mixer on low speed: 3 min mixing - 5 min resting × 3. Perform 3 sets of stretch and folds every 45 min. Rest another 45 min and do 1 coil fold. Rest 1 hour and perform a coil fold before moving the dough to the bench. Preshape and let it rest for 20-30 min. Do the final shape. Tuck it into a flour dusted banneton, rest 15 min before giving it a cold retard in the fridge over night 12-16 hours. Scored and baked directly from fridge. Preheated: steel and pan underneath for boiling water (to create steam). 250°c with steam 25 min. 210° 20 min without steam. Fan off. I use the Corbeau UFO Lame from @wiremonkeyshop.
