Following on from the charcuterie theme from yesterday... This gets me very excited and is something that’s been on my list for quite some time to make... salt beef short rib (if I can be bothered to set up the smoker then I might even go for some pastrami). For three short ribs (I could have added a fourth) I used the following brine: 2 litres of water, 225g of salt, 50g of caster sugar, 20g of saltpetre, and a quarter or half a tsp here and there of some aromats.
Bring to the boil to dissolve the salts and sugar, then cool. Then added the meat to the liquid.
I’ll leave this in a ziplock bag in the fridge for 1-3 weeks before cooking it.

Savi and I used our savings to flesh out a location-independent model of work while Sid used his savings to travel to coffee plantations all over the world and then open his own cafe in Goa! He’s an even BIGGER coffee geek than me, so it had to happen The three of us met in high school and we’ve been through COUNTLESS highs and lows together, but here we are, making sure we pursue our passions one little step at a time
