20% spelt. 80% KA bread flour. Hydration around 82% maybe a smidge more. The exciting thing about this one (at least for me) was the 72 hour cold bulk ferment. A ‘set it & forget’ it approach. Literally only 4 stretch & pulls before I did the pre-shape.
