Freeze it! Swiss Meringue Buttercream is tricky to make and takes time and patience. Why not make a large amount and freeze it the next time you prepare some? It freezes beautifully for up to three months. Here’s how to freeze and defrost it: • Freeze in flat plastic bags instead of blocks
• Defrost in the fridge overnight
• Defrost out of the fridge for a couple of hours • OR, very carefully, use a microwave on low setting
How long it will take depends on how much you are freezing, you will soon learn from experience!

Here’s how we made this cake - it takes a whole day to put this together! First, we cover the cake with a crumb coat of Swiss meringue buttercream. Then we pipe bands of different colours on the side and then scrape these to achieve pretty buttercream stripes on the cake sides. Meanwhile, buttercream flowers are piped And allowed to firm up in the fridge so that they can be handled easily. Once the buttercream flowers are ready, they are placed on the cake. Finally, buttercream leaves are piped to hide any gaps. The result is an absolutely gorgeous cake!
