Scarpinocc with brown butter and balsamic | Need I say more? We've been so fortunate to live alongside the best neighbors and friends. Today, one surprised us with fresh wine raspberries just picked from his garden. I pulled out my camera and made a chocolate balsamic reduction to drizzle over them, using the @7barrels vinegar that I received as a gift from another of our wonderful neighbors. (How lucky am I?) They were delicious. If I wasn't out of puff pastry (Gasp! I'm not sure how that happened), I would've made napoleons for all of us!⁠⠀ ❤️⁠⠀ What do you like to make with raspberries? This balsamic drizzle is a cinch to make! Hit SAVE to keep the instructions, below. ⁠⠀ ⬇️⁠⠀ INGREDIENTS + EQUIPMENT:⁠⠀ 1 cup balsamic vinegar (I used chocolate balsamic)⁠⠀ Heavy-bottomed, non-reactive saucepan⁠⠀ ⁠⠀ INSTRUCTIONS:⁠⠀ ⁠⠀ 1. Bring vinegar to a simmer over medium-low heat. Reduce heat to low to maintain a steady simmer for 10-15 minutes, stirring occasionally, until vinegar is reduced by half. Watch it closely toward the end so it doesn't burn. ⁠⠀ ⁠⠀ (The reduced vinegar will coat the back of a spoon when it's finished simmering and will continue to thicken as it cools. If you've cooked it too long, you can thin it with a little water.)⁠⠀ ⁠⠀ 2. Let cool to room temperature before serving, or store for up to several weeks in an airtight container in the refrigerator. Return to room temperature when you're ready to use it.⁠⠀ ⁠⠀ NOTE:⁠⠀ Balsamic vinegar intensifies in sweetness as it's reduced. For an even sweeter reduction, stir in 1-2 tablespoons of honey, brown sugar, or maple syrup and simmer as directed.⁠

. راتاتویی یه غذای سنتی فرانسویه که با سبزیجات پخته می‌شه.ریشه این غذا به شهر نیس برمیگرده. اما از اواخر قرن هجدهم، صرفا به حالت یک خورشت ساده پخت می‌شده. ولی در راتاتویی مدرن - گوجه فرنگی به عنوان پایه اصلی این غذا همراه سیر،پیاز،کدوسبز،بادمجون ،فلفل دلمه، رازیانه و یا برگ های خاردار و آویشن سرو میشه حالا من یه مدل راحت و سریع که چند تا چیز دیگه هم بهش اضافه میشه و خوشمزه ترش میکنه رو بهتون یاد میدم برای روزی که میخواهید گوشت نخورید عالیه پر از ویتامینه راتاتویی مواد لازم ۱ بادمجون بزرگ ۱ کدوی بزرگ ۳ گوجه فرنگی ۱ فلفل دلمه ای قرمز ۱ پیاز خرد شده ۳ حبه سیر رنده شده ۱/۴ کاپ عصاره سبزیجات ۱ ق چ زیره ۱ ق چ شکر قهوه ای ۱/۲ ق چ اورگانو ۱/۲ ق چ پودر چیلی ۱/۳ ق چ پودر پاپریکای دودی ۱/۴ ق چ زنجبیل تازه ۱ ق غ رب گوجه ۱ ق غ سرکه بالزامیک نمک و فلفل طرز تهیه تمام سبزیجات رو به صورت مکعبی به اندازه ۲ سانتیمتر کات بزنید توی یک ماهیتابه روغن بریزید و بزارید پیاز به مدت ۳ تا ۴ دقیقه یکم قهوه ای بشه سپس بادمجون و سیر رو اضافه کنید و چند دقیقه تفت بدید و بعد تمام ادویه ها اضافه بشن. بزارید چند دقیقه دیگه اروم بپزن و بعد بقیه مواد به غیر از ( رب گوجه و سرکه بالزامیک ) بریزید و بزارید ۱۰ دقیقه بپزن تا جاییکه که سبزیجات نرم بشن (له نشن) و بعد رب گوجه( اگر میخواهید سستون غلیظ تر بشه ۱ ق غ بیشتر رب بزنید ) و سرکه بالزامیک رو بریزید بعد از اینکه چند تا قل زد شعله رو خاموش کنید میتونید همراه برنج یا مثل خوراک نوش جان کنید❤️ #cookingwithleyla
