Day 366: soy & garlic pan-fried pork w/ romaine lettuce
DIY wraps for lunch today. I marinated super thin slices of pork belly ("bacon slice" in the supermarket) overnight in soy sauce, lots of finely minced garlic, and ground black pepper before frying them this morning. Then I cut the meat into manageable pieces so it'll be easy to wrap in lettuce leaves.
NOTE: I added store-bought kimchi to my portion and it turned out great.
Day 367: pan-fried chicken with sautéed zucchini
Yes, this again. The zucchini side dish here is one of my favorites, and it's really easy to make.
CHICKEN:
Season skin-on chicken thigh fillets with salt and pepper then fry in a pan with olive oil and butter.
ZUCCHINI:
Using the same pan, add a bit more olive oil if necessary then sauté minced garlic and chopped onions. Add the zucchini slices and a few spoonfuls of canned diced tomatoes* (juice included). Season with salt and pepper to taste and cook just until the zucchini is crisp-tender. Turn off the heat and mix in roughly chopped basil leaves.
NOTE:
* Fresh tomatoes are okay, too, but you need to cook them first before adding the zucchini. A little water is also necessary.
Day 365: paprika-garlic chicken
As always, I marinated the chicken overnight not only to save time but also to inject as much flavor into it as possible. Then this morning I fried the meat in a pan with olive oil and butter.
MARINADE: paprika (not Spanish), grated garlic, lemon juice, salt, ground black pepper, and olive oil
NOTES:
* I used skinless thigh fillets here. Skin-on yields better results.
* This dish can also be baked.
* The side is blanched broccoli quickly sautéed in the pan where I fried the chicken.
