Ever heard of Bullet Proof Coffee? • Originally bullet proof coffee was invented as substitute for your breakfast. Inspired by sherpas who have their coffee with yak butter as an energy boost a US health guru adjusted this drink to western palates. The result was a filter coffee mixed up with a tablespoon of each butter and coconut oil. But sometimes we also need a little energy kick in the evening, right? ;-) So I came up with an Old Fashion Twist: • Bullet Proof Old Fashioned • 40 ml Aged Guatemala Rum 40 ml Guatemala Medium roast Cold Brew Concentrate or Iced Aeropress 20 ml Bullet-Proof-Syrup (Butter-Coconut-Oil-Sirup) 1 dash Sole 10% 2 dash Angostura Bitters • Combine all ingredients without ice and mix until syrup is dissolved. Do you know where coffee is originated? • No. It's not Italy. Coffee was discovered around the 9th century in the region of present-day Ethiopia and Southern Sudan. It is therefore not surprising that there is still a deeply rooted coffee culture in Africa today. An example of this is the Senegalese "Cafe Touba". A filter coffee flavoured with a spice called "Grains of Selim" or "Guinea Pepper". The pouring from a great height creates a beautiful foam crown. What to do with coffee leftovers? • Part 1: Coffee Champagne • A lot of coffee shops have a lot of coffee leftovers at the end of the day. Because they couldn’t sell all of their batch brew or always pulling double shots even if there is a single shot order (which is due of better quality). But what to do with it? Drink it all? Dump it all? Either way… Please don’t! Unless you want to risk a serious heart attack or waste a wonderful product. There are other options! One of them was the „Coffee Champagne“ I came up with when I was thinking about what to do with leftover shots of espresso. So I collected the leftovers and added some honey, water and port wine yeast, filled it in bottles and kept it at a warm place to allow the yeast to do its work. The result was a bottle fermented, champagne like carbonized Americano. Of course you couldn’t taste all the subtle aromas of the original espresso anymore because of the yeast, but it turned into an exiting and tasty new product for itself without having any waste! • Did you also „recycle“ your leftovers before? Sometimes people don‘t see that bartending is way more than mixing together liquids. You have to know all your products, you need a good knowledge of human nature, you have to listen as well as entertain, you have to be a host, a concierge, a security, a creative mind and so much more. If you want to practice this profession conscientiously, it takes a lot. A lot of research, a lot of learning, a lot of time but above all, a lot of passion.
