Happy Monday! . Sharing a few of my favorite “cold treat” inspired cakes this week for summertime. First up is my mouthwatering Ice Cream / Hot Fudge Sundae cake from my Cake Confidence cookbook. With marbled vanilla bean & chocolate fudge cake layers, whipped vanilla bean buttercream (tastes just like ice cream!), chocolate ganache filling, an entire layer of chocolate ganache around the outside, a yummy salty layer of chopped peanuts, and of course a cherry on top (okay, so lots of cherries!), this cake was inspired by my sons obsession with ice cream desserts layered with hot fudge, peanuts, whipped cream, and a ruby red cherry on top (the classic ice cream sundae ). . It echoes all my boys’ favorite parts of an ice cream sundae (okay, so we usually toss on a bit of sprinkles, too), and the sweet and salty is everything with this cake. Oh Heeeeeey castle cake! . This past weekend and this week have packed with fun festivities celebrating my littlest guy’s birthday. He requested a castle cake for his knight birthday party, and he was so happy when he saw this! ⚔️. . Disclaimer: I never do all fondant cakes, but I wanted this specific marble effect, so I went for it - plus, it’s always good to practice a new technique. Aaaaand if you screw it up too badly, hey, it’s not for an order, so you’re all good, right? Thankfully this little castle one came together the way I sketched it out. Happy flag day!!! hope you guys are had a fun week, and have some fun things planned for this weekend! (My flag cake design from last year - tutorial on my website). . Today in my stories I checked in with you guys - I’ve had people asking if I’m going MIA . NOPE! Just doing something that makes my heart happy right now - letting summertime be about the time I spend with my kids. They aren’t just something to do when I don’t have other things going on like shows, classes, press, etc. They ARE my something fun to do! I don’t want them to grow up thinking “wow, mom sure made a lot of cakes and did a lot of traveling, etc.” But “Mom did make a lot of cakes, and we love that she’s working hard and doing something she loves, but she took the time for us when she could have done something else instead.” #priorities. It has made a huge difference. I prayed to have these boys, and wished so hard we could have another right now. But we haven’t. So instead of being sad about it, I’ve had the strong feeling to transform what happened into a blessing of fully soaking in more time with my boys. To enjoy them, instead of giving my energy towards what could have been. It has made this the best summer we’ve had yet! Anyway, it feels weird having to have to explain, but there it is. Hope you guys are okay with that . . #bakingwithblondie
