Вы любите кофе, так же как и я Тогда вот вам рецепт айс латте:
⠀1.Варим эспрессо ~60 мл (можно больше)
⠀2.Нагреваем молоко до состояния пены, а после остудить (ну у нас как бы айс кофе) ~100 мл (можно больше)
⠀3. Кладём кубики льда в бокал. Можно добавлять любые сиропы, но у меня их нет☹️
⠀4.Наливаем молоко, а потом медленно вливаем эспрессо.
⠀5. Сверху добавляю пену(от молока), корицу/шоколадную стружку/взбитые сливки(). В общем всё, что вы любите

You’ve been seeing it in my stories ☕️ and it’s quite the change from my usual espresso, which is quick and to the point and I’m ALL about convenience BUT I’ve been blending up this coffee drank & it’s been making my mornings FUN with nutrients

•2 espresso shots • 4 oz hot water • 1 tsp vanilla ghee @fourthandheart • 2 scoops collagen protein (I’ve been liking @ancientnutrition) • half a tsp of Date Syrup (about 4g to bolus for) • cinnamon/nutmeg/whatever sounds good!

I pulse it in my @nutribullet for 10 seconds and ta da I tweaked @shutthekaleup coffee recipe for my liking so you can totally experiment and do the same!

20g coffee beans for 200ml water (1:10)

50g water (95℃) infusion 30sec
50g water (90℃) every 30sec x 3 times
remove dripper at 2:05

(대회를 보고 따라해 본 것이라 실제 서지훈 선수의 추출과는 많이 다를 수 있음. Fellow 포트가 없어서 물줄기가 그나마 가늘게 나오는 다카히로 주전자로)

추출보다 높은 온도로 인퓨전을 진행하는 아이디어가 상당히 인상적이었다. 그러고 보면 처음 원두를 적실 때 상당한 온도 손실이 있다는 생각을 했는데 좋은 해결책인 것 같다. 이후 상온의 물을 조금 첨가해서 90℃를 만들었다.
중국 브루어스 챔피언도 사용한 오리가미 드리퍼는 생긴 것에 비해 물빠짐이 그렇게 빠르지는 않아서 애를 많이 먹고 있었는데, 분쇄도를 조금 다르게 하거나 미분을 제거하면 추출 속도가 조금 개선될 수도 있을 것 같다.
brew ratio가 1:10인 만큼 상당히 농축된 맛의 커피가 추출되었는데, 게이샤인 만큼 생각할 수 있는 컵노트들이 모두 들어있었고, 무엇보다도 정말 수퍼클린했던 맛.
