15 year-old white Burgundy is an experience. This 2004 Domaine William Fevre Chablis Grand Cru Bougros Côte Bouguerots was another first for me. I have been drinking some ca. 10 year-old, more extensively oaked white Burgundy recently, but this was my first time with such a high quality Chablis. On the nose, virtually all that was left were secondary and tertiary aromas of sour cream, butter, fresh cheese, and vanilla Greek yogurt. It smelled of a baked potato with all of the fixings. On the palate it showed far more elegantly: dry, high acid, medium alcohol, and a medium(+) body. This wine apparently saw no new oak. Flavors of underripe white peach and fresh yellow apple were dominated by the tertiary development of the malolactic fermentation and lees stirring notes, but the concentration was astonishing. This wine was delicious, but I think it would have been better three to five years ago. New oak can be a savior for these MLF-forward wines.
