Hmm, I’m running out of height with this amount of dough. Left proofed in the larger banneton. #crumbshot of Tri grains. 35% freshly milled Corack, Canadian wheat and German spelt (equal ratios), 34% KABF, 31% Shipton Mills Canadian Flour with the additional 12% spent Black Korean glutinous rice (I heated it to deactivate any residual enzymes) from our wine making and a handful of black goji berries for the one on the right. 943g dough. 20hrs mix to bake. 6hr cold auto, 3 coils, 4O min rt proof.
