I found a new favorite place in Oslo where they serve zoodles AND you can put together your own pasta dish! I had zoodles with chicken, avocado, arugula, olives, broccoli and loads of olive oil. So green and yummy! And a glass of rosé of course! I’ll definitely be back!

Servus zusammen,
heute gab es wieder Reis mit Gemüse in Sojasoße. So einfach und so lecker. Den Reis hab ich heute variiert.
1 Tasse Reis 2 Tassen Wasser. Aufpimpen mit Salz, gemüsebrühe und etwas Olivenöl. Dazu einfach Knoblauch und eine Zwiebel reingeben. Leicht aufkochen lassen und dann auf niedriger Temperatur köcheln lassen.
Da könnte man den Reis auch ohne Gemüse essen :) Für das Gemüse hab ich Reste verwertet - Zwiebel, Paprika - gewürzt mit Majoran und Thymian. Dann Sojasoße je nach Menge dazu und nicht vergessen HONIG.
Dann schmeckt das ganze super. Viel Spaß

We had 15 minutes to prepare dinner today so we ended up with this: grilled chicken breast, creamy cauliflower mash and salad with arugula, tomato and cucumber. I added butter, full fat sour cream, a pinch of nutmeg, salt and pepper to the cauliflower mash and topped it with grated Pecorino cheese. Too bad we don’t have any leftovers... I’m blaming my 1-year-old.☺️

I usually eat three large meals during the day. An early breakfast, lunch and dinner. I fast between 7 p.m. and 7 a.m. The only exception is when my bloodsugar gets low. Eating few large meals and focusing on vegetables and healthy fats keeps me full for a long time and keeps my blood sugar stable. Salads are perfect in my opinion as long as they are balanced. I always add a source of protein to my salad and loads of healthy fats. Yesterday I made this pretty salad with avocado and chevre. Two of my favorite foods in the whole world! The third one is chocolate. So I had 92 % dark chocolate with almond butter for dessert. P E R F E C T I O N
