BIBIMBAP!! I love this recipe and make it time and time again. It’s a recipe inspired from a Korean dish feat beef, stir fried veg, rice, and topped with a fried egg and chilli sauce. You need to find some Gochujang paste - available in most Asian shops (there’s one on Drury street, Rathmines road etc), as it’s key for the recipe. Once you get good at it, you can make this dish in about 20 mins, so it’s perfect for a week-night meal! Recipe below: Serves 2: (macros per portion: 615cal, 43g protein, 58g carbs, 23g fat) Sauce: 4 tbsp water, 1 tsp sugar, 1 tbsp rice wine vinegar, 2 tbsp Gochujang. 1 tbsp oil 300g 5% beef mince 4 clove garlic minced 1 tbsp soy sauce 1 tbsp Gochujang 60g uncooked rice per person Veg to stir fry - I used courgettes and onions 2 eggs Salt & pepper Optional topping: chopped spring onion, sesame seeds Method: combine the ingredients for the sauce and set aside. Cook the rice according to pack instructions. Heat a frying pan over medium, add half the oil, add the mince and half the garlic and stir fry, while breaking up the mince. Keep cooking until dry, then add the soy sauce, Gochujang, mix till well combined and then set aside. Now stir fry the veg with the remaining oil and garlic, season with salt and pepper, set aside. Finally fry the eggs to your desired doneness. Serve your bowl with a layer of rice, mince, veg and top with fried egg, drizzled chilli sauce and optional sesame seeds + spring onion!

Rotina tá longe de ser uma coisa legal pra gente. Só de pensar em fazer todos os dias a mesma coisa, nosso coração fica até triste. Ontem a nossa aula foi no parque. Os professores combinaram com a gente, cada um levou uma coisa pra comer, a gente sentou na grama, rimos, jogamos bola, cantamos... saímos da rotina de ir pra sala, sentar na cadeira, fazer os exercícios. Isso já mudou bastante nosso dia. Tem vezes que a gente vai “no automático” e já nem procura mais coisas alternativas pra tornar os dias mais leves. Mas isso é tão importante pra gente. Essa vida de acorda cedo, come, vai pra escola, volta, come, vai pro trabalho, dorme. Isso não faz bem pra gente. Nosso corpo precisa de mais, pede mais, grita por mais. A gente tem que aprender a ouvir o nosso corpo e a nossa mente, se não, daqui a pouco, desaprendemos a viver.
