Today was my youngest girls birthday! She turned 2, and to celebrate we made cookies instead of cake because whenever she has anything resembling cake she will eat the frosting and throw the rest on the floor. ‍♀️ . . . These cookies only had 4 ingredients: -1 1/2 cups softened pastured butter - 1 cup powdered sugar - 3 cups sprouted flour (you can use whatever kind of flour you want) - 2 tablespoons lemon juice and 1 teaspooon lemon zest 1️⃣Combine butter, sugar, juice and zest and blend until smooth, by hand or with a mixer. 2️⃣Stir in flour until completely mixed. 3️⃣Chill dough in fridge for at least a half an hour 4️⃣Roll out on wax paper to about 1/2 an inch thick. Cut out, decorate 5️⃣Bake at 325 for about 12 minutes. We used violas, dandelions and dwarf dandelions for the decorations. Flowers are high in vitamins and minerals .
