Kalihim is the Filipino word for secretary but the name of the bread must come from the root word lihim which is Filipino for secret. Chito Chavez of the bakery Tinapayan Festival in Manila says that the name must have come to be because "it was a matter of secrecy" that the bread is made from stale or day-old breads for the filling, a way to extend leftovers so they don't go to waste.
The bread is also called pan de regla because it looks like a folded and used sanitary napkin. It also goes by other names, bellas, pampam, pan borikat, floorwax, kabukiran, ligaya, catalugan, balintawak, lahi or kalahi, and everlasting, among others.

1 medium onion (minced)
1/2 cup oil
4 cups water 1cup tomato sauce
bunch of pechay
1 big bell pepper (sliced)
2 medium sized potatoes (diced)
3 bananas ( saging na saba)
2 cups green beans
3 tablespoons fish sauce
pepper to taste Heat the sauce pan and add enough oil to fry the potatoes. Take out the potatoes and set aside, decrease oil to 3 tbsp and sautee the garlic and onion. Add the meat and fish sauce and let it simmer for 5 minutes. Add tomato sauce, water, pepper and cover the pan.let it simmer in low heat until meat is tender. Add potatoes bell pepeers and green beans. let it simmer for another 3 minutes. Add pechay/ bakchoy. Season with fish sauce/ salt or pepper according to your taste! enjoy ☺️
