Baked salmon + sautéed veggies + pasta
Rub the salmon filet with some sea salt, black pepper and dried oregano.
Bake at 350F for about 25min.
In a large saute pan over medium-high heat, add the avocado oil and heat.
Add the nicely cut carrots, green beans, corn and green peas and cook until just starting to wilt, about 2 minutes.
Add the oregano, sea salt and pepper and stir well and cook just until vegetables are wilted, about 3 minutes. Remove from the heat and serve.

Baked chicken thighs + mashed sweet potatoes + salad
Sprinkle the boneless chicken thighs with some sea salt, pepper and dried oregano. Bake at 350F for about 30min.
Peel the sweet potatoes, cut in 3x3cm cubes and boil in salted water for about 20min. Mash with some butter and milk.
For the salad I used spinach, tomatoes, dried cranberries, sesame seeds, olive oil and lemon juice.

Seared scallops + baked asparagus + bell pepper
Sear the scallops on a hot pan with some avocado oil, sprinkle some salt, pepper and garlic powder. Sear for about 3 min each side.
Bake asparagus at 350F for about 10min. Sprinkle some salt and pepper.
Cut the bell pepper and sprinkle some sesame seeds.
