Anyway the recipe is below for those interested! ⠀
Healthy Vegan Carrot Cake with Cashew Vanilla Icing ⠀

2 cups of wholemeal flour⠀
2 tsp of apple cider vinegar⠀
2 tsp of baking powder⠀
2 tsp of flaxseed powder⠀
1 1/2 cup of nut or soy milk⠀
2 large carrots grated ⠀
1/2 cup of coconut sugar⠀
1/3 cup of chopped walnuts (optional)⠀
1/2 tsp of mixed spice⠀
1 tsp of nutmeg powder⠀
1 tsp of vanilla powder ⠀
1 1/2 tsp of cinnamon⠀
Pinch of salt⠀
⠀
1. Preheat your oven at 175degrees Celsius. ⠀
2. Line a cake tin with baking paper.⠀
3. In a mixing bowl, add in the dry ingredients together and mix.⠀
4. Add in the wet ingredients and mix slowly.⠀
5. Grate the carrots and fold them gently with the dough. ⠀
6. Pour in your cake tin and cook for 50-60 minutes at 175degrees. ⠀
7. Leave to cool down before adding my cashew vanilla icing and extra walnuts. ⠀
⠀
Cashew Vanilla Icing ⠀
⠀
1 cup of soaked cashews ⠀
1 tbsp of coconut oil⠀
1 1/2 tsp of vanilla powder⠀
4 tbsp of water ⠀
2 tbsp of maple syrup or stevia (I used stevia this time) ⠀
⠀
1. Soak your cashews in water overnight and drain and rinse.⠀
2. Mix in a blender with the other ingredients until creamy and smooth. ⠀
3. Add more water if required. ⠀
4. Place in the fridge for 30 minutes before pouring on top of your cake when cooled down. ⠀

Veggie quinoa bowl a super easy and super delicious plant-based dinner. To be honest I love eating this type of bowl but sadly my husband doesn’t like it so I usually have it for lunch but I made it tonight as I knew he wasn’t home my kiddies love it though So many combos for veggie bowls: simply mix a grain like quinoa or brown rice with roasted vegetables, beans, good fat like avocado and a few seeds and dressing if you wish and you are done! Is your husband/partner a bit less into health foods like mine?! Do you like this type of bowls? .

In other news I am really happy to be reunited with my beloved avocado toast after finding some #gf #soyfree and vegan bread. ⠀
Annabelle still reacts strongly to soy and wheat sadly so in the meantime I am happy to have a few more food options. Being a #foodallergy mum is hard! I think people sometimes think I am faking Annabelle’s food allergies, or I am soft and creating the allergies in my head but I honestly have to make food sacrifices most days for her- the other option of eating foods with allergens make me feel like I am poisoning her then with my breastmilk and knowing her future pain and damage it is causing to her gut I would rather not being able to eat out or skip sweets/ pizza/favourite foods! In the meantime being more aware of the food allergies for kiddies out there has made me more interested in creating allergen free recipes. ☺️

Vegan Hazelnut and Chocolate Mini Cheesecakes⠀
⠀
Base:⠀
1/2 cup of almonds⠀
1/2 cup of hazelnuts⠀
1 cup of pitted dates⠀
1 tbsp of water⠀
1 tbsp of cacao⠀
⠀
Cheesecake Layer:⠀ 1 cup of soaked cashews 4-6 hours ⠀
6 tbsp of raw cacao powder⠀
1 tsp of vanilla powder⠀
1/2 cup of rice malt syrup⠀
1/3 cup of melted coconut oil⠀
1/3 cup of roasted hazelnut butter (homemade nutella) ⠀
⠀
Melted raw chocolate + roasted hazelnuts to top⠀
⠀
1. First make some homemade vegan chocolate hazelnut butter by roasting 1 cup of hazelnuts in the oven for 10min at 200 degrees and blending with 1/4 cup of maple syrup, 1/3 cup of cacao and 1/3 cup of coconut oil. (This recipe will make more than you need for the cheesecakes - you can use the leftovers to top them with it or use it for toast/ dipping fruit! ) ⠀
2. In a food processor blend the base ingredients together then press down into silicon muffin moulds.⠀
3. Then drain your soaked cashews and blend with the cacao, coconut oil, rice malt syrup and hazelnut cacao butter and the vanilla.⠀
4. Pour on-top of the raw bases and freeze for a few hours.⠀
5. Top with melted chocolate and extra hazelnuts and keep in the fridge for a few days or freezer for a few weeks. ⠀

Who wants a slice of my vegan Choc Chip Zucchini Bread?!? This yummy recipe is refined sugar free as I used @nuviaproducts sweetener (my favourite way to bake healthier sweets!). This recipe is also nut-free and gluten-free!) Have you ever tried zucchini in baked goods? This recipe was perfect for a little bit of Monday Baking for snacking this week. I will pop the recipe below:
Choc Chip Zucchini Bread (Vegan, nut-free, Gluten-free, refined sugar-free) • 1 flax egg (1 tbsp of flaxmeal + 3 tbsp of water)
• ½ cup of Nuvia baking stevia
• 2 cups of gluten-free self-raising flour
• 1 tsp of vanilla essence
• 1 cup of plant milk of choice
• 1 cup of grated zucchini
• 1/3 cup of vegan – low sugar chocolate chips
1. Pre-heat your oven to 180 degrees Celsius;
2. In a cup mix the flax egg together and leave to sit a few minutes;
3. In a mixing bowl, add in the flour, Nuvia baking stevia;
4. Grate your zucchini and drain slightly with your hands and add it in the mixing bowl;
5. Mix together then add the plant milk, vanilla essence, the flax egg and vegan chocolate chips.
6. Pour into a bread tin lined with baking paper and cook for 1 hour and 15 minutes in the oven at 180 degrees Celsius.
