Beet Poached Pears w/ maple coconut yoghurt & pistachios because they’ll make your Easter brunch look fancy AF. Ingredients ⠀⠀⠀⠀⠀⠀⠀⠀⠀ For the poached pears: • 2 cups water • 1 medium beet, peeled & diced • 2 Barlett pears, peeled & cut in half • 2 cinnamon sticks • 2 Tbsp maple syrup For the toppings: • 1 tub (5 oz.) @culinayogurt • 2 tsp maple syrup • ½ cup crushed pistachios Method: 1. Add water, beets, cinnamon, and maple syrup to a medium saucepan. Bring to a boil. Once boiling, reduce heat and simmer for 5 minutes. 2. Gently place peeled pears in poaching liquid, cover, and simmer for 25 to 35 minutes, turning occasionally to ensure even colour, until pears are cooked but still firm. 3. Once pears are tender, transfer to a bowl and scoop out core with an ice cream scoop or spoon. 4. For the filling, stir maple syrup and coconut yoghurt together. 5. Fill cavity with a scoop of coconut yoghurt and top with pistachios. 6. Drizzle with maple syrup and enjoy immediately! Note: If you want to increase the colour of the pears, remove cinnamon sticks from poaching liquid, transfer liquid and beets to a blender and blend until smooth. Strain through a sieve and pour the liquid back over the pears. Cover and chill in fridge until you’re ready to use them. this meal gets me every time ✨ . I have always been a sweet potato lover but silly me didn’t realize until last year that it is so much quicker to cook these taters on the stove top vs. the oven Here’s how I do it . First, dice up a sweet potato into even pieces-the smaller they are, the quicker they cook! In a skillet or a pot with a lid, add just enjoying water to cover the bottom. Toss in the diced sweet potato, put on the lid, and turn on the heat to medium high. Let steam until they are soft and most of the water has evaporated. Add in a drizzle of oil and a sprinkle of pink salt. Sauté until they begin to brown and are tender. Taaa-dahh! I added them to a plate with baby spinach + boiled egg + ripe avocado + diced cucumber + hemp hearts+ lemon juice + black pepper + micro greens what is your favorite way to cook sweet potatoes?!

I have always strived to share positivity on this platform, in hopes to inspire others to live a whole + healthy life. But, I do know that being honest + real about life contributes to overall wellness just as much as eating well. Today is day 13 of me taking Wildlywholesome full time. I quit one part time job, got scared, started another part time job, quit that one, took a vacation to be with family, and now here we are. My dream. I started this account back in 2014 before an “Influencer” was a thing and people still read blogs. My photos weren’t good but I loved sharing my passion for healthy food. I kept it up + I told myself that one day this would be my job. I worked on it everyday in college, often prioritizing photos over studying. I made vision boards. Planned out what my every day dream life would look like. I manifested all that I have now. It’s wonderful yet terrifying. The dreams that I have for WW are so big that they scare me. The fear turns into overwhelm + anxiety. This turns into my inner mean girl telling me false stories of not being good enough. It’s a giant snowball effect that is tough AF to get out of. After an emotional weekend of being in that downward spiral, I am grateful for today. A fresh start. I am figuring it all out, trying my best to be patient + love myself through it all. I want you to know that behind pretty photos + stories of matcha pours, I am still a human who very much doubts herself. I also want to remind you that making your dreams come true is never easy...but it’s worth it. P.S. So very thankful @cleanjuicegreenridge now sells salads. Sometimes it is so needed to have someone else make you nourishing food

I wanted to share some quick and delicious dinner inspiration from a meal I made the other day since I haven’t posted a recipe on my site in too long! Been so busy, so while you wait, here’s a recipe featuring @eatbanza shells, my parsley walnut pesto, and roasted cauliflower and red onion. . Makes 4 servings: make the parsley pesto from my site (or use pesto of choice). Cut a cauliflower into bite sized pieces, and slice a red onion. Coat in olive oil, season w salt and pepper, and roast at 425 until golden (even dark in some places) and very roasted, about 25-30 minutes (flip once in the middle of baking). Cook box of @eatbanza pasta to slightly al dente, reserving some pasta water. Heat a skillet, and add cooked pasta, some parsley walnut pesto, and a bit of pasta water to help pesto coat pasta. Add more pesto to taste as well as about 1/4 cup grated Parmesan or nutritional yeast to make it creamy. Add a bit of pasta water as needed while mixing in cheese to thin and help cheese coat the pasta. Season with s+p, and serve topped with cauliflower, onions and more Parmesan. #bovcooks
