Shakshuka. Traditional Israeli breakfast, but this dish originated in North Africa and is now super trendy in the U.S. A great reminder how food can define a culture but also create connection and build understanding ❤️ • • • Beautifully poached eggs in a richly seasoned tomato sauce is just plain good. The fact that this is a one skillet meal...makes it perfection. • • • Heat olive oil in a skillet, over medium low heat. Add one thinly sliced yellow onion and one seeded, thinly sliced red bell pepper. Soften about 15-20 mins. Stirring on occasion. Pre heat oven to 375. To skillet add 3 minced garlic cloves, 1 t ground coriander, 1 t paprika, 3/4 t ground cumin, and a dash cayenne. Stir. Cook 1-2 mins. Add 1 28 oz can of whole tomatoes (rough chop them), season with 1/2 t pepper, 1/2 t salt. Stir and cook 8-10 mins to thicken. Stir in 5 oz crumbled feta. Make divots for 6-8 eggs. Crack eggs into each divot. Season with salt, pepper. Bake 7-10 mins until eggs set. When done: top with fresh chopped parsley or cilantro. Serve with pita or challah. If you need more veggies, serve atop fresh spinach leaves.

I been craving some chilaquiles so I decided to share my recipe with @taqueriaelgrullensehm! Everyone has their own way of making chilaquiles, but I like MY chilaquiles spicy, crunchy, cheesy, and very flavorful!!! We start off by grilling some tomatillos, tomatoes, and 3 different types of chilies with some garlic. I like my tortillas EXTRA CRUNCHY!!
