Although ghee is made from butter, there are some key differences between the two. Ghee might be more favourable for some people. Here is what makes ghee different:

✔️ has a high smoke point making it a better option for high heat cooking
✔️ contains nearly double the MCTs

Spent an entire day off the gram yesterday (that doesn’t happen too often ). Not intentionally, but because I had a lot to get done. I hosted the girls from my culinary club for dinner last night. It was a casual affair and the menu was simple. To start with, I served beetroot buttermilk (which some enjoyed spiked with vodka) and chaat. Dinner included a bhuna #kheema (mince meat cooked in #ghee) served with pickled onions and a spicy, sweet & tangy tomato chutney. I made a mixed vegetable stew for the non meat eaters. Store-bought idiyappams and pav completed the meal. There were also three homemade desserts ( because priorities ). I spent quite a few hours in the kitchen cooking for the ten of us. I usually cook for three, so the larger quantities threw me off a bit. Thankfully, everything turned out very well. It was a fun evening with lots of laughter but no photos (I was so preoccupied, I forgot to click any). This is what our Saturday lunch of leftovers looks like. HEALTHY PURANPOLI ⬇
Ingredients
⬇
1 cup wheat flour
1/4 cup warm milk
3 tbsp sesame seeds toasted and coarsely ground
1 cup deseeded dates roughly chopped
1/4 cup milk to soak the dates
3 tbsp jaggery grated
1/2 tsp cardamom powder
4 tsp ghee
Instructions

Soak the dates in the milk for 20 mins.
Take the flour in a bowl and add the warm milk little by little to make a smooth dough.
Cover it with a damp cloth and keep aside for 10-12 minutes.
This makes the dough softer and more pliable.
Make a coarse paste of dates with the milk they were soaked.
Heat 1 tsp ghee into a non-stick pan and add the dates mixture, sesame seeds and jaggery and cook on medium flame till the mixture leaves the pan.
Once the mixture cools down divide it into 10 equal portions and keep aside.
Take 10 equal portions one by one and roll thinly.
Place a portion of the stuffing mixture and close the edges.
Roll to make thin puranpolis.
Prepare all puranpolis like this and keep aside.
Heat a non-stick pan on medium flame and cook each puranpoli till golden brown in colour using 1/4 tsp ghee on each side.
Serve hot

Przygotuj:
- 300 g ryżu basmati (wypłucz go i namocz przez 30 min w zimnej wodzie)
- 500 ml wody
- sól do smaku
- 1 łyżeczka masła #ghee (zwykłe też da radę)
- 2 łyżki stołowe masła ghee (ewentualnie zwykłe) - to nie błąd
- 1 łyżeczka ziaren kminku
- 1 cebula (w kostkę)
- 5 cm laski cynamonu (pokruszona, ja to robię tłuczkiem do mięsa)
- 4 całe kardamony (otwarte)
- 1 łyżeczka mieszanki przypraw garam masala (można pominąć)
- 180 g grubo startej marchewki
- 120 g mrożonego groszku
Najpierw ryż idealny - to ważne!
Ryż dokładnie odcedź, włóż do garnka i zalej wodą. Doprowadź do wrzenia, dodaj sól i masło i gotuj minutę. Potem zmniejsz ogień, przykryj garnek pokrywką i gotuj przez 15 min. Nie podnoś pokrywki i nie mieszaj ryżu. Gdy skończysz gotowanie zostaw garnek przykryty przez kolejnych 10 min.
Na patelni rozpuszczamy 2 łyżki ghee, dodajemy kminek i smażymy, aż ziarna będą strzelać. dokładamy cebulę, cynamon i kardamon, podsmażamy ok 5 minut, aż cebula się zarumieni. Dorzucamy garam masala , potem groszek, marchewkę i sól do smaku. Dusimy ok 2 minut i dokładamy ryż. Mieszamy metalową łyżką, delikatnie by nie połamać ziaren (nie używaj drewnianej) Zdejmujemy z ognia i mamy pilaw idealny!
