My ginger cake complete with mini gingerbread house and pear ‘trees’ is in the official Bake Off book!!! I am so so pleased! Please let me know if you do try it ☺️ I’m already thinking about making different versions of this... what about a Halloween version with a haunted house, angry faces carved in to the pears and a tiny meringue ghost? Anyone else got any ideas for alternatives? I’d love to hear xxx

Bank Holiday Baking Jamaican Ginger Cake.
One of my favourite a little more indulgent recipes but you will not be looking back and couldn’t be easier to make!
In a world of trying to condemn food groups let’s just see food as food and eat in moderation no food is good or bad.. it’s the amount of each you eat.. so let’s live and let go at times for enjoyment with friends family or just you ❤️.

Ingredients:
225g Self-Raising Flour
1 tsp Bicarbonate of Soda
1 tbsp Ground Ginger
1 tsp Ground Cinnamon
1 tsp Ground Mixed Spice
115g Unsalted Butter, Chilled and Diced
115g Black Treacle
115g Golden Syrup
115g Dark Brown Muscovado Sugar
275ml Milk (not Skimmed)
1 Medium free-range Egg, beaten
A 900g loaf tin, about 26 x 13 7cm, greased with butter and lined with greaseproof paper.
Method:
Heat the oven at 180C. Sift the flour, bicarbonate of soda, ginger, cinnamon and mixed spice together in a bowl
Add the diced butter and rub into the flour mix.
Spoon the treacle and golden syrup into a small pan and warm gently until melted and runny but not hot. Set aside until lukewarm. Put the sugar and milk into another pan and heat gently, stirring well to dissolve the sugar. Leave to cool until lukewarm. Then whisk the milk into the flour mixture, quickly followed by the treacle mixture and the egg, to make a smooth thick batter, the consistency of double cream. **I ALSO add in chunks of crystallised ginger as a little delicious extra!**
Put the mixture into the prepared tin. Bake the gingerbread in the heated oven for about 45 minutes or until a skewer inserted into the centre of the loaf comes out clean.

I saw an article in The Telegraph earlier titled ‘How to be Gluten Free and Keep Your Friends’ ♀ I mean, if your friends leave you because you’re gf, then they’re clearly not your friends are they?! Has anyone experienced friends/family treating you differently because of your food intolerances?
