10 Minute Curry (full recipe below) the response to my stories earlier when I asked for feedback on those that have tried my recipes has been so overwhelming and has got me a little emotional, I am not going to lie! I still can’t believe how many of you are loving the recipes and from someone who literally has zero chef training or skills I just love to cook and share my journey so thank you to everyone who has trusted me and tried one! This curry was mentioned A LOT as one of the fan favs so I thought I would share it again as it’s also one of my favs to make when short on time.

Makes 4 portions
—
Ingredients:
▪️2 tbsp olive oil or coconut oil
▪️3 garlic cloves crushed
▪️1 red onion roughly diced
▪️1 tsp paprika
▪️1/2 tsp cayenne pepper
▪️1/2 tsp ground coriander
▪️Pinch of chilli flakes
▪️2 tbsp tomato puree
▪️2 cans chickpeas 400g x2
▪️200 ml veg stock
▪️1 can coconut milk
▪️1/2 cup ground almonds 60g
▪️200g spinach

1️⃣Heat a large pot on a medium heat with olive oil/coconut oil and crushed garlic
2️⃣Meanwhile roughly dice the red onion and add to the pot to cook down for a minute
3️⃣Add all the spices and tomato puree and stir
4️⃣Now add the chickpeas, coconut milk, veg stock and cook on a medium/high heat for 5 minutes making sure to stir
5️⃣Add the ground almonds and stir. Allow to cook down for a further 2-3 minutes
6️⃣Finally take off the heat and stir through the spinach until wilted

Gluten Free & Vegan Doughnuts (full recipe below) super easy to make using just 5 ingredients you got to give these beauties a try!

Makes 6 — Ingredients:
▪️200g gluten free self raising flour
▪️120ml unsweetened vegan milk (I use almond)
▪️6 tbsp maple syrup
▪️4 tbsp coconut oil melted
▪️3 tbsp cacao powder
▪️Pinch salt

1️⃣ Pre heat your oven to 180C
2️⃣ In a large mixing bowl add the gluten free flour, 4 tbsp maple syrup, 2 tbsp melted coconut oil and the milk and mix well into a smooth batter
3️⃣ Grease your doughnut mould with coconut oil and add the batter into each mould making sure to smooth over the top
4️⃣ Add to the oven for 12-15 minutes (depending how hot your oven runs)
5️⃣ Meanwhile prepare the chocolate topping. To a Bain Marie add 2 tbsp melted coconut oil, 2 tbsp maple syrup and then slowly stir in 2 or 3 tbsp cacao powder until desired consistency
6️⃣ Finally dunk the doughnuts into the chocolate sauce and place on a drying rack. You can now top with whatever you want. Leave to lightly set for 10-15 minutes
