Having the most random plate of goods tonight for dinner! It was super yummy though so I thought I would share. Perfect post workout meal

Eggs~ 2 cagefree brown eggs fried up in a pan over medium heat in olive oil, pink him. sea salt, and pepper
Veg~ 2 handfuls of spinach & a handful of sliced white mushrooms cooked in a pan with olive oil, salt, and pepper
Pasta~ organic farfalle pasta cooked according to instructions on box and served with marinara (I look for ones with no added sugar!) and nutritional yeast for some added cheesiness + protein

Today I took my AP biology exam and think I crushed it to be honest! It was the exam that was making me the most nervous but I felt great which was relieving. Now all I have left is AP stat exam on Thursday and then we are done! Also have some BIG NEWS! My family is moving in 1 month!! Excited to have a change in scenery. Hope everyone had an amazing Monday

On the menu clockwise starting from the bacon:
.
1.Pan fried some @porterroad bacon (I did more, but saved the rest for meals throughout the week).
.
2. I sliced up some halloumi and pan fried for about a minute on each side in some of the bacon grease.
.
3.Sliced up half an avocado and topped with everything but the bagel seasoning.
.
4.Sliced up a couple of organic strawberries.
.
5.Served with 1 @peteandgerrys egg. For this yolk, I boiled the egg for 6.5 mins and put it immediately in an ice bath. 6.5 mins gets a jammier egg and 8-9 mins get a firmer yolk. I just sliced the egg and probably dip some of that halloumi or bacon in it.

Vegan.DIY: Raw strawberry cheesecake.
.
- for the crust, blitz 12 pitted dates, 1/2 cups hazelnuts, 2 Tbsp coconut oil, 1/2 Tsp lemon juice and a pinch of salt until you get a fine mixture that holds together; transfer to 6" spring-form pan, press firmly and make sure that the mixture is evenly spread.
- for the filling, blend 1 cup soaked (at least 2 hours in water) cashews, 3 Tbsp coconut oil, 1 Tbsp lemon juice, 2 Tbsp agave syrup, 1 Tsp guar gum and a pinch of salt until smooth and creamy; pour filling onto crust and smooth with a spatula.
- refrigerate for at least 4 hours (overnight works best).
- carefully remove spring-form pan; arrange up to 2 cups diced strawberries on top; drizzle with melted chocolate.
- serve and enjoy .
- Note: keep cheesecake refrigerated for up to 5 days.
