This meal is a majorrrr flashback for me. Using the same (and only) bowl from when I lived in a dorm and making the same breakfast I would eat every day- ah, good times. To be completely honest, I didn’t want to eat this for lunch today, but it was all I had. I don’t have the money right now to go out and buy all of the things I would usually eat- and that’s OKAY. To cover 3 protein chocolate 1tbsp coconut oil . ⏩⏩Instructions In a bowl, mix coconut, melted coconut butter, maple syrup and cream until well combined -Line a pan with parchment paper and pour the coconut mixture, press firmly in place. Freeze about 15 mins Melt the protein chocolate and coconut oil, stir well Take out the coconut mixture from the freezer and cut into 10 bars. Gluten Free Fudgy Chocolate Pistachio Brownies by @kidseatbyshanai Headover to her page for loads of deliciously healthy recipes! #recipe ➕➕ INGREDIENTS 1 cup / 125g buckwheat flour ⅔ cup / 60g raw cacao powder ¼ teaspoon gluten free baking powder ¼ teaspoon salt 1 cup / 120g rapadura sugar ¾ cup / 150g butter, melted 3 eggs, room temperature 1 tablespoon vanilla extract ½ cup / 70g dark chocolate pieces ½ cup / 70g pistachios, shelled, plus extra for decorating ½ cup / 70g dark chocolate, melted for decorating . ⏩⏩Instructions Preheat oven to 175°C. Line a 20cm x 20cm cake tin with baking paper. In a large bowl, whisk together the buckwheat flour, cacao powder, baking powder and salt. In another bowl, add the sugar and butter, whisk together then add in one egg at a time, whisking between. Whisk in the vanilla extract. Pour the wet mixture into the dry mixture and whisk well. Fold in the chocolate and pistachios gently without over mixing. Pour into the tin and bake for about 18-20 minutes until a toothpick comes out mostly clean, but still a little fudgy. Pour over melted chocolate, sprinkle with chopped pistachios and cut into squares. . No-Bake Summer Fruit Tart by @bos.kitchen Headover to her page for loads of deliciously healthy recipes! #recipe ➕➕ INGREDIENTS Crust 1.5 cups gluten-free oats 1/2 cup pecans 2 tbsp ground flaxseed 1 cup medjool dates, pitted 3 tbsp maple syrup 3 tbsp coconut oil, melted . Filling 1 mango, peeled and sliced 2 nectarines 3 apricots 1/4 cup orange juice 1 lemon, juiced 3 tbsp maple syrup 1 can coconut milk 2 tsp agar agar 1 tbsp arrowroot powder . ⏩⏩Instructions Prepare crust by blending oats, pecan and flaxseed in a food processor until crumbly. Add in dates, syrup and coconut oil and blend until it combined, it should stick together easily between your fingers. Press into tart tin and set aside in the fridge. Prepare filling by adding mango, nectarines, apricots, orange and lemon juice to a blender and process until smooth. Press the pulp through a sieve into a small saucepan. Add maple syrup, coconut milk, agar agar and arrowroot to the pan, stirring well and bringing to a gentle simmer for 5 minutes. Stir thoroughly until smooth and cook for a further 3 minutes. Pour into tart shell and chill for at least 2 hrs. Top with fresh fruits and mint. . Fancy a little treat after dinner? ‍♀️ • Well, I’ve got just the recipe for you • In my earlier post, I explained that I wanted to come up with something for one of my followers She is a competitive athlete and was looking for something that she could make for her partner and herself to celebrate her birthday • I loved this idea as single serve recipes are often hard to come by ☺️ Truth be told...I’ve made this exact recipe every evening in the microwave for the past week and a half • For @inkavr_wffpro though, I decided to bake it...which excites me because it shows the versatility of this recipe I plan to use this mixture in my waffle maker, as well as when making donuts • Anyway, without further ado...Here’s the recipe • INGREDIENTS: 1 serving protein (I tried this with @NPL_international @npl_prolifestyle whey and with @mysmartsuperfoods plant based protein) 2 egg whites 1/2 @rhodes_squish butternut, carrot & sweet potato or 150 grams cooked pumpkin 1 TBS vanilla essence 1 heaped TBS coconut flour 1/2 tsp stevia powder 1/2 tsp baking powder 1/2 tsp cinnamon A pinch of bicarb 1 tsp @woolworths_sa dark choc chips, optional ***If using plant based protein, you may need to add more liquid: I suggest adding 1/4 cup almond milk or milk of choice. • METHOD: 1. Preheat oven to 180 degrees and spray a large muffin tray with some cooking spray. 2. Add all of the ingredients, except the choc chips, to a blender and blend until smooth. 3. Stir the choc chips into the mixture. 4. Spoon into the prepared tray and bake for 10 to 12 mins. 5. Once cooked, slice and frost (I made a frosting out of fat free cottage cheese and protein powder) or eat as is.
