Getting creative with a sweet potato using a spiraliser to take eggs to the next level.

Ingredients
• 2 large free range eggs
• 1 tbsp Extra Virgin Olive Oil or avocado oil
• 1/2 large sweet potato (spiralized)
• 100 grams cherry tomatoes - (sliced in half)
• 200 grams Spinach or other leafy green

Method
1. Preheat oven to 350F.
2. Heat on medium a ovenproof pan. Add 1/2 the oil. Add the spiralized sweet potato. Sauté for 2 minutes before shaping to nests.
3. Crack the eggs in the middle of the nests.
4. Allow to set then transfer to the oven for 3 minutes to cook just through. Add the tomatoes
5. Remove from the pan from oven.
6. Add the spinach to the pan. Allow to cook in the residue heat.
7. Drizzle the remaining olive oil.
8. Season to taste.

Weight Loss vs Weight Gain with Kielbasa Bowls with Rice and Beans from The Meal Prep Manual - 60 Minute Meals. This is quickest meal prep recipe I have. It can be made in the time it takes to cook rice. It’s a wonderful option for those weeks you need a lunch for the week but don’t want to spend time in the kitchen.
On the weight loss side is a much smaller version of sausage and it is turkey sausage instead of the pork/beef on the weight gain side which makes it much lower in fat and saves a boat load of calories. The rice, beans, and carrots contribute to the majority of the carbs in this meal.
On the weight gain side there is about 2x the rice and sausage. As stated earlier, the sausage is a beef/pork sausage instead of turkey. It is a fattier sausage and you can get a lot of flavor in this small dish by using a regular kielbasa sausage instead of turkey. I use chopped frozen broccoli because it is cheaper, easier, and you don’t have to cook it. It will cook in the microwave upon reheating your meal. Same with the carrots. .
Calorie balance peeps. Calories in vs calories out. Learn and understand that phenomenon if you want to make any kind of body composition changes. You don’t have to count calories to lose or gain weight but it will help. Understanding your body’s relationship between your energy expenditure and energy intake can teach you how to make better decisions when it comes to food and meeting your goals.

Garlic Parmesan Zucchini Chips

Ingredients
➡️ZUCCHINI CHIPS
2 large zucchinis
2 cups bread crumbs (230 g)
¾ cup parmesan cheese (80 g)
⅓ cup fresh basil, chopped (10 g)
1 tablespoon garlic powder
½ teaspoon salt
1 teaspoon pepper
1 ½ teaspoons red pepper flakes
2 eggs
➡️SAUCE
⅓ cup mayonnaise (80 g)
1 tablespoon lemon juice
1 tablespoon garlic powder
½ teaspoon salt
1 teaspoon pepper

Preparation
Cut off top and bottom of zucchinis and slice zucchinis into ½ - ¼ inch (6-12 cm) slices.
In a small bowl, whisk eggs together.
Preheat oven to 450ºF (230ºC).
In a large bowl, mix together bread crumbs, parmesan cheese, basil, red pepper flakes, pepper, garlic powder, and salt.
Take a zucchini slice and dip it in egg wash, then coat it in bread crumb mix, coating all sides and patting mixture onto both side, then place the slice on a large baking sheet. Repeat for all slices.
Bake in oven for 15-20 minutes or until chips are golden brown. Flip halfway through.
In a small bowl, mix together mayonnaise, lemon juice, garlic powder, salt, and pepper.
Serve with dipping sauce.
