This week I’ve had exams for the the first time ever and I’ve confirmed how important it is for me to eat well during school, especially when work piles up. I really felt it when I didn’t take the time to make my lunch, coming home starving and ending up eating 4 pieces of toast with vegan chocolate spread. (Yes I did that 3 times this week). I got really sick as my stomach had a flare up and long story short I don’t feel great
Anyways, before my toast crisis hit, I’d been obsessed with taking this “salad” to school. I call it a salad but really is a meal, filled with protein, fats, starchy carbs and heaps of nutrients. I’ve also been working on perfecting a muffin recipe and I think I’ve finally done it!!! Hope you enjoy this lunchbox edition!
Recipe for everything↡↡
Salad
✱1 cup tricoloured quinoa, cooked
✱1 1/2 sweet potatoes, cut into cubes roasted in the oven with olive oil and salt
✱ 1/2 kale head, washed and cut into small pieces, then tossed in a bowl with lemon juice, ACV, salt and olive oil. Use your hands to massage into the kale to help break it down
✱handful raw chashews, plus any other raw veggies and avocado
After the kale has been massaged leave it to soak for 15 minutes. Then, add the cooked quinoa and roast potatoes, stirring everything through. Doing this while it’s hot is good as it helps the kale break down. Once it’s cooked, add anything else you like such as raw veggies and nuts, season to your liking and your good to go!!!
Muffins↡↡
✱2 cups oat flour
✱1/2 cup almond milk
✱2 mashed bananas
✱1/4 cup maple syrup
✱2 TBSP chia seeds
✱1 cup frozen raspberries
✱1/2 cup cocoa nibs
Blend all ingredients except the chia seeds, cocoa nibs and raspberries together in blender until smooth like cake batter (you may need more almond milk). Then stir in the remaining ingredients and bake in muffin cups in an oven at 180 Celsius for 15 minutes or until a knife comes out clean!! Allow to cool a little before devouring!! Ps, my lunchbox is from @bigbiteeco and it’s vegan, made from recycled bamboo fibre!

PLEASE:
*don't tell your kids they need to go on a diet or detox. This can have a long-lasting, lifelong negative effect on them.
*don't ever make comments about their body. Anything about they are getting heavier, chunky, or suggest they will have to burn all the food off by exercising.
*Comments like "you look slimmer now" are not compliments and will have them questioning their body size more.
*Talk kindly about yourself. They will mirror your attitude.
If you are concerned about your child's weight, what can you do?

⚽Encourage daily exercise and join them! Have them join a team or make a family plan for daily walks.

Don't make exercise a chore - make it fun! Find an activity they enjoy. Sometimes this takes a little time! Be patient, they are worth it. -
Increase their veggie consumption. Each meal, have them eat their veggies FIRST, before the rest of it. I put out a plate of veggies while dinner is cooking for them to munch on.

Buy fewer processed items like granola bars, chips, etc and buy MORE fruits for quick snacks. If it's not in the house, they will eat less of high-calorie foods.

Have more sit down dinners and TALK. The longer the meal last, the more satisfied they will be....leading to less snacking later.

Don't vilify foods. Let them have a treat here and there. There are no bad food, especially if the rest of their diet is predominantly whole foods. I know my kids will increase their sugary foods if I say they are off limits. Teach moderation, it is key.

❤️Lead by example - make whole foods a priority. Let them see you eat your veggies, lean protein and non processed food and make exercise a priority!

Hi hope you're having a beautiful saturday. For today's breakfast I first wanted to make pancakes, but I messed up the batter. No one is perfect and sometimes something fails. So instead of pancakes I made this chocolate oatmeal which is fortunately quite easy and you can't mess up pretty much anything. On top I put a banana, some pecan nuts, coconut yoghurt and almond butter.✨ On top of everything I sprinkled some shredded coconut and after taking photos I poured a splash of soy milk. How did you started your saturday?
