Woohoo! Corn truffles from the farm at @oakhillcafegvl! Called huitlacoche in Mexico, this is a species of mushroom (Ustilago maydis) that infects corn plants, producing deliciously disfigured kernel growth that is then consumed by the mushroom before sporing out to find new hosts. Native populations and other cultures throughout Central and South America consider this fungi an absolute delicacy. Here in the US, it's called "corn smut" and considered a dreaded disease by corn farmers who use fungicides as a preventative. One person's fungal pathogen is another person's gold. We fall in the camp that considers huitlacoche a highly desired delicacy, because it's one of the absolute best flavors out there: rich, earthy, and indescribably delicious (hence the common name "corn truffles"). In the second photo, you can see a cross-section of the maize ear. Check out the enlarged corn kernels and the branching fungal hyphae growing throughout. On the surface of some of the more mature mushroom/kernels, you can see where the fungi is starting to spore. All parts of the corn truffle mushroom are edible once cooked, even the mature sporing sections which add a beautiful dark color and even more intense flavor.
