For years, people have been trying to make khachapuri and Georgian cuisine "happen." We're talking the country between Turkey & Russia, and the cheese-filled, egg-topped bread oft described as pizza or its relative.
If you haven’t had it, check it out (here, from Oda House). It’s soupy, feta-ish with a runny egg center and an Auntie Anne’s crust. It doesn’t eat like a slice. There isn’t tomato sauce. You could compare it to Neapolitan pizza in how it eats, I guess. But it’s more like an open calzone. So every time I see pizza mentioned with it, I cringe.⠀⠀⠀⠀⠀⠀⠀⠀⠀

Others from Saveur, Tasting Table, Food & Wine, Westword, etc. describe it with “pinnacle,” “indomitable,” “wonderful,” and “mainstream,” but this Eater hed is my favorite: "Khachapuri Has Crossed Over Into a New York Essential Dish."
In the last five years, it says, "khachapuri has become a NYC classic." It has? Ask the average New Yorker. I can't wait for the response. I bet without those heds, most folks wouldn't know it.
Another such recent article in The New Yorker looks at trends IN Georgia just as "Americans look TO Georgia for inspiration," a rabbit hole, which (sorry) kinda glazed my eyes.⠀⠀⠀⠀⠀⠀⠀⠀⠀
For the record, I’ve got nothing against Georgia. The cuisine I've been exposed to in NYC has been fine if pricey for what it is. And I like khachapuri enough, I’d eat it if set it in front of me.
I haven't been immune to PR trying to create the next thing and I've trend-made ("Out damn spot). This just seems forced and mystifying. Like the late 80s when you could only buy pleated pants. “What is going on? Who is forcing this? Why?”⠀⠀⠀⠀⠀⠀⠀⠀⠀
Of course, “pizza” clicks better than “calzone.”
