Happy Monday! This loaf of dedicated to my friend Lilian @pontodeveu So sweet of you to stop by while you were in town and so generous of you to gift me with this beautiful stencil! I haven't stenciled in quite awhile, and honestly it took a couple tries - but loving how this adds a bit of glamour to the bake

Quick Specs: *vegan* toasted oats porridge, using vegan butter and oat milk! 20% porridge, 10% white whole wheat, 5% whole grain rye, 80% hydration, 2% sea salt Stencil tips: spritz dough very lightly with a fine water mist & brush using a pastry brush; work slowly, small sections at a time; apply your stencil, then a layer of all-purpose flour and rub lightly with finger until the stencil is complete; carefully remove stencil, slash, bake as usual

I got asked about my recipe very often, I have posted the recipe in some of my posts.
But in my opinion the recipe is not that important. The fermentation and handling are.
For the beginners I really recommend you stick to one recipe, a simple one, make it again and again. This will help your relationship with your dough.
Yes I have made the same recipe for hundreds of times, it is my dough, I know it almost as well as I know my dog. So when something is not quite right I noticed it right away, and most of the time I was able to correct it on time.
It is a simple recipe:
75%-80% hydration, 20% levain, 2 %salt, all white flour.
Sometimes I feed my levain with some ww or rye or spelt.
It always tastes wonderful.
It is the fermentation brings the depth of flavour and the handling brings the texture, not the complex ingredients, I think

Two-tone roll bread. After baking, lightly brush honey water (honey+water 1:1) on breads. It will be more delicious when you take a bite of the bread.
⚽️It’s dessert time after exercise. We have a beautiful weather this week, so two little guys and I play football everyday after school. We are playing Chinese football, Cu Ju, made of bamboo, and the ball won’t go too far. It’s good for kids to play in a small field.
