I’m not a huge oatmeal fan so I’ve been experimenting with different recipes that I can incorporate it with. All I did was combine oats, yogurt, fruit, chia seeds, and almond milk and left it in the fridge until the morning after. ☀️You don’t necessarily need to leave it in the fridge but doing so allows the chia seeds to expand. Simple blueberry compote to turn a plain coconut yogurt into a magical purple summer breakfast!

Chicken Pesto Salad In A Jar
Over 50g of protein per serve!

Ingredients: .
1½ pounds skinless boneless chicken breasts
1 tbsp olive oil
2 cups dry whole wheat fusilli pasta
¼ cup prepared pesto
¾ cup low fat Greek yogurt
½ cup sliced black olives
8 oz cherry tomatoes, halved
1 roasted red pepper, chopped
4 oz baby mozzarella, halved
2 oz arugula
2 scallions, sliced
salt, black pepper to taste .

Directions:
1️⃣ Preheat oven to 450°F.
2️⃣ Place the chicken in a baking dish, season with ½ tsp of salt and ¼ tsp of black pepper or to taste and drizzle with olive oil and toss to coat.
3️⃣ Bake in a preheated oven for 18-20 minutes.
4️⃣ Remove from the oven, allow to cool slightly then chop into bite size pieces. Set aside.
5️⃣ Bring a large pot of salted water to a boil over high heat and add the pasta and cook, until the pasta is al dente, 9-11 minutes.
6️⃣ Drain and rinse with cold water and set aside to drain thoroughly.
7️⃣ To make the dressing, in a small bowl combine the pesto and Greek yogurt. Season with salt and
black pepper to taste.
8️⃣ Divide the dressing between 4 jars and top with cooked pasta, cherry tomatoes, chicken, arugula, mozzarella, olives, roasted pepper and scallions. -

INGREDIENTS
For the Honey Mustard Dressing:
1/4 cup plain greek yogurt
1/2 cup yellow mustard
1/2 cup raw honey
1 1/2 tbsp freshly squeezed lemon juice
For The Salad:
4 boneless skinless chicken breasts
1/2 tsp kosher salt
1/4 tsp ground black pepper
1/8 tsp garlic powder
1 tbsp olive oil
1 lb grape or cherry tomatoes whole
2 lg. cucumbers peeled and diced
1/3 cup sliced almonds1 cup crumbled goat cheese
3/4 lb mixed baby greens

INSTRUCTIONS
Heat the olive oil in a skillet over medium-high heat until hot. Season the chicken breasts on both sides with the kosher salt, ground black pepper, and garlic powder, and then add to the hot pan. Cook, flipping occasionally, until the chicken is well-browned on both sides and cooked through, about 10-12 minutes, or until the inside reaches 160 degrees Fahrenheit. Once cooked through, remove from the pan and let cool. Then, dice into bite-sized cubes.
To make the honey mustard salad dressing, in a small bowl, combine the plain Greek yogurt, clean yellow mustard, raw honey, and freshly squeezed lemon juice. Whisk until this is very smooth.
To assemble the mason jar salads, start with the dressing at the bottom. This will keep it as far away from the lettuce as possible and will allow us to add in other items later that can avoid getting mushy. You can add about 1-4 tbsp. of the dressing, depending on how much you prefer and how many other ingredients you’re going to add.

10 pieces of garlic

Half a tablespoon of tomato paste
2 tbs of olive oil
2 tbs of water
A pinch of finely chopped parsley

For the rice:

1 liter canned jar
1 cup of washed rice
1,5 - 2 cups of hot water
10 pieces of dried apricots
10-15 pieces of raw almonds
Half of a small package of currants
A small pack of pine nuts
