This fruit tastes like powdered instant vanilla pudding! Here's one of the oddest fruits I've ever eaten - this is West Indian locust, or jatoba, Hymenaea courbaril, native to Central & South America and the Caribbean.
I've been curious about this one since I heard it combines a delicious flavor with a funky odor. Whenever I've heard that story before about a fruit, as with durian, guava, and jackfruit, when I've finally gotten to experience the fruit in person, not only is the fruit's taste fantastic, but also to me its FRAGRANCE is heavenly intoxicating.
For this species, people say the fruit has an odor like stinky feet, so much so that one common name for it is "stinking toe", or "stink toe". So with great curiosity, I cracked open one of the hard-shelled fruits, revealing the cinnamon colored flesh within, and took a whiff. My first reaction: "Smells like powdered instant pudding mix!" The moment you tear open a packet of instant pudding, or dry instant milkshake or protein powder drink, you inhale a whiff of that dry, powdery sweetness, combining vanilla, cocoa, and whatever else they put in those mixes. That's almost exactly how this fruit smells like to me. Definitely a pleasant aroma - it smells like food.
Then I put some of the powdery fruit pulp surrounding the seeds in my mouth, and discovered this stuff tastes exactly like it smells. It's as if you've placed on your tongue a spoonful of powdered instant pudding or protein drink mix. As your saliva moistens the powder, you get a wonderful sweetness, along with flavors of vanilla and hints of caramel, maple syrup, and mesquite. It's really good. Reportedly the dry pulp is highly nutritious, rich in carbohydrates, fiber, & protein, and people use it in cookies, cakes, and fruit bowls.

First let me say, it tastes much better than the name suggests lol! Stinking toe get that name because the pods resemble a big toe, and when mature they have a pungent smell. But inside that pod is a sweet powdery flesh with a creamy taste like powder vanilla milk. We cracked hundreds of pods, collected the powdery pulp, grind to finer powder, and packaged in 2 oz and 4 oz foil zip bags for you!

A árvore chega a alcançar de 30 a 45m de altura em algumas regiões. A sua polinização acontece por meio dos morcegos, beija-flores e abelhas, principalmente, a abelha Jataí, que dá origem ao um dos nomes populares da espécie.

Já a dispersão das sementes pode ocorrer por gravidade, ou seja, caem e rolam pelo solo, como também se espalham pela natureza através de fezes de animais como a cotia e o macaco-prego.

Por ser uma árvore de floresta e comum na mata ciliar, o Jatobá é indicado para recuperação de áreas degradadas, além de muito usado na medicina popular. A casca serve pra tratar gripe, bronquite e infecções na bexiga.
