Just finished a MASSIVE batch of bubbly, raw pineapple Jun kombucha. I fell in love with Jun while I was staying in Puna, Hawaii. But I couldn't find it anywhere here in the mainland...so I decided to brew it myself!

Jun is known as the champagne of kombuchas, and is extra bubbly and light tasting. Rather than sugar and black tea, like regular kombucha, jun is brewed with green tea and raw honey.
I brew my jun with water purified by reverse osmosis, organic green tea (sourced from India) with Holy Basil (an incredible adaptogenic herb), pure raw organic honey sourced locally here in northern cali, and of course the Jun scoby.
I brew in single batches vs the continuous brew method, which creates more consistency and less sugar residuals.
Then during the second fermentation, I add in the organic pineapple juice. ...not to toot my own horn...but this stuff is liquid gold! Most store bought/big name kombuchas have tons of sugar residuals and very little enzymes and probiotics (much less than they claim), and are brewed with teas sourced from highly polluted areas (China being the worst). I love jun tea because it has extra enzyme power since it's brewed with raw honey. And where does all the sugar go? The scoby (symbiotic culture of bacteria and yeast) eats it and produces gut healing beneficial bacteria and probiotics! Oh and BUBBLES!!!!
