Ingredients
* 1 pound ground beef * 1 medium grated onion
* 2 tsp paprika
* 1 tsp cumin
* 1 tsp salt
* 1/4 tsp pepper
* 1/8 tsp cayenne pepper
* 1/4 cup fresh parsley (chopped)
* 1/4 cup fresh cilantro (chopped)
* 1/4 tsp Saffron
Instructions
Into your beef, add all ingredients . Be sure to squeeze the onions in your hands to drain its juice otherwise there will too much moisture in your beef and they won't stick to the skewer.
Mix with hand until everything is incorporated but don't overwork it
Cover with foil and let marinate in refrigerator for at least an hour and up to six hours.
Scoop out a ball of the meat mixture and Slide the meat cylinders onto metal skewers, molding and flattening the meat around the skewers.
If not using skewers, shape the meat into long cylinders about 1.5 inches wide and place on a baking sheet.
Preheat BBQ grill.
Place skewers on grill and cook over medium heat about 4 minutes on each side, until meat is thoroughly cooked and lightly browned.
To grill the kebabs in the oven, preheat your oven to 450 degrees F.
Bake kebabs for 20-25 minutes, rotating as needed to brown the kebabs all around.
