Kaiseki dinner with a view. Kaiseki is a Japanese haute cuisine multi course dinner. The dishes are prepared according to the season and local ingredients. Our ryokan in the Japanese Alps served our dinner every night at six o’clock sharp. It consisted of twelve courses They prepared one of the courses on the grill next to our table. While we were having dinner we had a spectacular view over the rice fields, the mountains and the sunset. It was just so amazing. Scroll to see all the pictures. A kaiseki dinner is a great way to taste the seasonal and local produce. It’s realy recommended to try a kaiseki if you’re in Japan. The extra age really helped mellow out this typically very dry and steely juice. It’s still a crisp Champagne but now with tons of ripe apple, brioche, and caramel. The midpalate took a little time to open up but it evolved nicely throughout the hour that it was consumed.
The #DomainedeMontille #CortonCharlemagne #GrandCru 2014 was double-decanted 2 hours prior and was drinking beautifully by dinner time. It’s very focused, energetic, and with a intangible elegance that reminded me so much of #Roulot. A stunningly beautiful wine perfect for Japanese #kaiseki.
