Had three things on my list to try in Kinosaki—snow crab, onsen eggs & the local yura yura yuagari pudding, gently cooked in hot springs water until just barely set, producing the lightest silkiest custard imaginable, with fresh cream on top & a deep dark caramel on the bottom that was so rich I swear they used a whole vanilla bean per bottle. For the onsen eggs, we walked to the busy little gelato cafe by the ropeway gate, lined up to buy a red mesh bag filled with raw eggs, tied them to a rack set over a hot spring so they were fully submerged, then waited the recommended time (20 for hard boiled, 14-15 for soft boiled, 11 for a soft creamy “onsen egg”). When the eggs were done, we untied the bag & moved over to the cracking station, where we clipped the tops off with an egg cutter, sprinkled the eggs with salt (the locals make sure you remember the salt, it’s very important), and ate them with a little paddle. Perfection!
