How do you sharpen your kitchen knives? In this video, I show the process I use when I sharpen on water stones.

As you can see at the start of the video, the knife is completely dull and won’t cut paper. I start by setting the edge on a coarse DMT (around 320 grit I believe) diamond water stone and sharpen until a burr is raised on both sides. Next, I use a 1,000 grit Chosera stone and polish the edge. This stone leaves a little bit of tooth in the edge, which is nice to have for kitchen use. Finally, I strop the burr off using a leather strop that is loaded with 1-micron diamond spray. As you can see at the end, this process seems to work pretty well!
