You know that uncomfortable moment in elementary school, when the teacher asks you to point to a country on the world map, and it dawns on you that you’re not even sure what continent it’s in? That’s kind of how I felt about wine lees. I mean, sure I knew they existed. I was sure they were absolutely essential to the winemaking process. BUT HOW EXACTLY? my brain screamed whenever I’d come across the term “sur lie” on a wine bottle. Thankfully, VP of winemaking at Ramey Wine Cellars Cameron Frey schooled visitors last week with this fancy plexi-glass light-up wine barrel created expressly for educational purposes. So here’s the deal: lees are yeast bits left over from the process of autolysis (a.k.a. when yeast cells self-destruct via enzymes created in the fermentation process). Lees are used to add texture and flavor to whites and sparklers. (BTW, Ramey Wine specializes in neo-Burgundian Chardonnays made from grapes sourced from the Russian River Valley, Sonoma Coast and Carneros.) As the yeast cells break down, they release sugar and amino acids, which add body to wines. When wines are aged on the lees (for anywhere from a few months to several years), they can become creamier, more complex and richer. That’s the goal anyway. At Ramey, they take the step of stirring the lees—bâtonnage—to increase the effect. When Frey stirred the lees in the light-up barrel, I gasped, because of the sheer volume of yeast-bits it stirred up. The once-translucent golden liquid became clouded. According to Frey, it takes up to 11 days for the lees to settle again. Now we know!
