One pan pasta with as little effort as humanly possible - that’s the kind of weeknight dinner that makes me feel good! -⠀⠀⠀⠀⠀⠀⠀ INGREDIENTS 8 ounces linguine 1 pint cherry tomatoes, sliced in half 2 ounces baby spinach leaves 1 small onion, finely sliced 3 cloves garlic, finely sliced A small handful of basil leaves, roughly chopped 2 tablespoons extra virgin olive oil 1/2 teaspoon crushed red pepper 1/2 teaspoon salt 2 ounces parmesan cheese, grated INSTRUCTIONS 1. In a large deep pan, place the spaghetti in addition to the cherry tomatoes, spinach, sliced onions, garlic and basil. Drizzle the olive on top and season with crushed red pepper and salt. 2. Pour 4 cup of boiling water (or vegetable/chicken stock) into the pan and bring the mixture to a boil. Cook for 8-10 minutes on medium heat stirring occasionally with tongs, until the liquid in nearly evaporated, creating a sauce. 3. Remove the pan from heat and stir in parmesan cheese and fresh basil. Coming at you with one of my favorite VOLUME eating SNACK hacks? .⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ I personally love snacking on nuts, but find them to be quite calorie dense for their size! I can easily eat an entire snack bag on my own. This is one of my favorite snack swaps for when I’m looking for that SALTY SWEET combo! .⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ On the left we have 3/4 cup ( 100g) of peanuts and raisins. .⠀⠀ On the right we have 1 cup air popped popcorn and two tsps mini chocolate chips!! I make my air popped popcorn by placing some popcorn kernels into a microwave safe bowl and cover it with a plate. Place in the microwave and voila! Coming at you with another VOLUME eating SNACK hack ! .⠀⠀⠀⠀⠀⠀⠀⠀⠀ Growing up, my mum would always buy me yoghurt covered raisins, fruits clusters etc. with the aim of it being the ‘healthier’ ( more nutrient dense) alternative to chocolate Little did she know that the so called ‘yoghurt’ coating is actually made mostly of ingredients like sugar, partially hydrogenated vegetable oil, corn syrup etc. .⠀⠀⠀⠀⠀⠀⠀⠀⠀ These days, I like to reach for a far more satisfying snack- that is so quick and easy to make! . On the left we have 50g yoghurt covered fruit clusters .⠀⠀⠀⠀⠀⠀⠀⠀⠀ On the right we have 100g blueberries dipped in 100g plain low fat organic yoghurt sweetened with stevia. I make this by taking a toothpick and dipping the blueberries into the yoghurt( if you’re lazy and don’t care for appearance you can pour blueberries in bowl of yoghurt and mix until all of them are well covered). I then line a tray with baking paper and spread the blueberries on it evenly.
