BANANA BREAD | We’ve woken up to a grey rainy Tuesday so that can only mean one thing - Banana bread for breakfast!
I whipped up this loaf yesterday (Mary Berry recipe always!) whilst F was napping but this time I stirred in a couple of tablespoons of the delicious @packaging_not_included peanut butter.
I may have slathered some extra on top this morning after TOASTING MY BANANA BREAD (thank you @georgieeatsuk - life changing!). Seriously, toast your banana bread.

I absolutely LOVE having base recipes on hand. Once you figure out your favorite ratios for a base recipe you can use it create endless variations. Here is my basic muffin base recipe. Use it to make any flavor you want!
BASIC MUFFIN RECIPE INGREDIENTS
* 2 cups (240 gr) all-purpose flour
* 2/3 cup (130 gr) granulated sugar
* 1 TBSP (14 gr) baking powder
* 1/4 tsp salt
* 1 large egg, room temperature
* 2/3 cup (160 ml) milk (can be whole, 2%, skim, or non-dairy)
* 1 tsp vanilla extract
* 1/2 cup (120 ml) vegetable oil or canola oil
INSTRUCTIONS
1.) Preheat the oven to 425 F (220 C). Line a muffin tin with muffin liners or spray with nonstick spray.
2.) In a large mixing bowl, sift together the all-purpose flour, granulated sugar, baking powder, and salt. Alternatively, the ingredients can be whisked together well. Any spices you want to add would be added here.
3.) In a separate bowl, stir together the egg, milk, vanilla, and oil until well combined. If using any extracts they would be added here.
4.) Pour the wet ingredients into the dry ingredients and stir with a spoon or rubber spatula until just combined. The batter will be lumpy. Do not over-mix or the muffins will become tough. If using, fold in any add-ins.
5.) Fill the muffin cups up about 3/4 full.
6.) Bake at 425 F for about 10 minutes and then turn the oven heat down to 350 F (175 C) for about 5 more minutes or until a toothpick inserted in the center comes out with moist crumbs.
A FEW VARIATION IDEAS:
* Blueberry Muffins: Fold in 2 cups (300 gr) fresh or frozen blueberries.
* Chocolate Chip Muffins: Fold in 2 cups ( 300 gr) chocolate chips.
* Cranberry Orange Muffins: Add 1 TBSP orange zest and 1 1/2 cups fresh or frozen cranberries. Top with an orange powdered sugar glaze.
* Cheddar Bacon Muffins: Fold in 4 strips of crumbled cooked bacon and 1 cup of shredded sharp cheddar cheese. Sprinkle more shredded cheddar on top of the muffins before baking.

Ingredients
6 eggroll wrapper (you can use tortilla flour wrap)
8 Ounce Cream Cheese (Softened)
2 Tablespoons Sour Cream
1/4 Cup sugar
1 Teaspoon Vanilla Extract
1 3/4 Cups Strawberries (Hulled & Sliced, Divided)
Vegetable Oil (For Frying)
1 Tablespoon Ground Cinnamon
1 Tablespoon Sugar
How To:
1 - In a bowl, add sour cream, cream cheese, 1 tablespoon of sugar and vanilla extract and beat till smooth. Gently, fold in 1 ¾ cup strawberry slices.
2-Arrange wrapper/ tortillas on a smooth surface. Place strawberry mixture over the lower third of each tortilla evenly. Fold the two sides of each tortilla towards the center and then roll like a burrito. With toothpicks, secure each burrito.
3-In a shallow bowl, mix together 1/3 cup of sugar and cinnamon. Keep aside.
4-In a deep pan, heat about 2 - 2½-inch vegetable oil over medium-high heat and fry chimichangas for about 4-5 minutes per side or till golden brown.
5-With a slotted spoon, transfer the chimichangas onto paper towel lined plate to drain for about 1 minute. Coat each chimichanga with cinnamon sugar and serve. Serve with the topping of remaining strawberry slices.
