Hope you’re having a great week. A tiny attempt to make it even better here is the recipe of these moist and super fluffy vegan lemon cupcakes with fresh mangoes. And the best part is the sweet and slightly spicy jalapeño and bell pepper jam filling.

Flour 125 g
Sugar 115 g
Baking soda 1/2 tsp
Salt 1/4 tsp
Water 70 g
Oil 60 g
Vanilla 1 tsp
Vinegar 15 ml
Almond powder 30 g
Lemon zest 1/2 tsp
Lemon juice 1 tsp

Take water, vinegar, oil and vanilla in a bowl and whisk to combine. Sift in all the dry ingredients and mix well until everything is combined. Pour in equal amounts in in lined cupcake moulds. Bake at 160-170 degrees C in a preheated oven for 12-15 minutes or until a skewer inserted in the middle comes out clean.

Jalapeño and bell pepper jam:
100 g finely chopped bell pepper
15-25g (depending on how hot you want) thin jalapeño slices
60g granulated sugar
1 tsp lemon juice
1/2 tsp salt
A pinch of red chilli powder .
Put everything in a saucepan and cook on medium heat until the bell pepper start to soften. Mash everything up with a potato masher to make a slightly fine mixture. Cook till the mixture is thick (but not too thick, mostly like marmalade consistency). Remove from heat and let it cool. Store in a glass jar.

Vegan buttercream
50 g nutralite fat spread
150 g icing sugar
10-15 g almond or soy milk
1 tsp lemon juice
Fresh mangoes cubes to put on top of the frosted cupcakes.

Cream the fat spread for a minute or two. Add in the sugar and cream until light and fluffy. Add in vanilla, lemon juice and almond milk and beat till fluffy.
