For the second year in a row, we tapped the silver maple tree in our backyard. Over the course of a few weeks, we collected over 50 gallons of sap, which boiled down to just a few quarts of delicious syrup. I water bath canned the syrup for long term shelf storage in hopes that we can stretch this yield throughout the year. Maple syrup changes color throughout the season, as you can see here in this photo. The grade A is the lighter syrup and is considered to be the more desirable syrup, but the darker (grade B) has even more of a caramely maple flavor. ❤️ It's a lot of work to collect the sap, boil it down all day long and then can it, but it's so much better than anything I've ever purchased so if you have a maple tree in your yard, I urge you to give it a try next year!
