Whole30 Pad Thai. I have to tell you, this is one of my favorite recipes in the book. It’s absolutely delicious and something I could eat again and again—and guess what? There are no leftovers. If you’ve never matchsticked a carrot, it’s cutting a carrot thin like a matchstick and it adds so much crunch and deliciousness. Used here with cabbage as a noodle, it’s rather spectacular, and then add sautéed marinated shrimp, green onions, coconut aminos, and my pretty spectacular Almond Sauce, and it’s a complete pleaser. In my new cookbook, about 80% of the recipes are @Whole30 and the rest are family recipes—things my kids grew up with like Lucy’s Egg Salad, potato pancakes, minestrone soup, and my grandma’s eggrolls, to name a few. And it’s not just recipes. The book is sprinkled with my favorite quotes, from Mother Teresa to Bill Murray and some from my own family. Everybody loves Thai food. Dig in! VEGAN HOT PAD THAI from @amelietahiti
PAD THAI ✨
1 clove garlic, crushed
1 shallot or half onion, chopped
1T fresh ginger
2 medium carrots, in ribbons
1cup frozen red bell pepper or 1 fresh
100g (1/4 pound) firm tofu (option), cubed
half broccoli head, chopped
1/4 cup chives or scallions
Option: 1 cup mung bean sprouts
200g (1/2 pound) thai rice noodles
extra: edamame, fresh coriander, peanuts & lime
SAUCE :
1/4 cup peanut butter
1.5 tbsp tamari sauce
1 tbsp rice vinegar (or ACV)
half juicy lime
1 tbsp sesame oil
1 tsp dulse (option)
1/2 tsp turmeric (health kick!)
1/8 tsp chili flakes
1/4 cup water
black pepper
METHOD :
1. Cook the noodles according to packet instructions. Once cooked, drain & rinse with cold water to prevent sticking.
2. Blend all sauce ingredients (in blender or shaker)
3. Start sauté garlic, shallot, ginger, carrots & pepper with few tbsp of the sauce about 5 minutes.
4. Then, add tofu, brocoli, beans, chives, mix & cook 5 more minutes
5. Add pasta to the pan, all sauce and other half of lime juice. Mix off the heat.

Pad Almost Thai

I wanted to make a Pad Thai but I didn’t have all of the ingredients so I just managed with what I had haha. It actually turned out tasty as well
•
Ingredients
- 1/2 packet of rice noddles
- 1 x carrot
- 1 x capsicum
- 2 x garlic glove
- 1 x veggie stock cube
- 1 Tbsp siracha
- 2 Tbsp ABC soy sauce
- 2 Tbsp brown sugar
- 1 tsp corn flour
- 1/2 lime juice
- 2 tsp coconut oil
- 1 x Tbsp peanuts

Method
1. Bring a big pot of water to the boil
2. While water comes to boil, finely chop garlic and add to heated wok with coconut oil
3. Slice capsicum into thin strips, grate carrot and then add to wok. Cook through for 3-5mins before taking out placing to the side
4. Once water is boiled, read instructions at the back of noddle packet and cook half
5. While noddles are cooking begin to make the sauce
6. Dissolve veggie stock cube in 2/3 cup of hot water and pour into wok with siracha, brown sugar, and ABC soy sauce and stir for 2mins
7. Add corn flour into cup with 3 tablespoons of water. Add to the sauce to thicken
8. When sauce is thickened add carrot and capsicum
9. Strain noddles and then also add to the mixture and stir
10. Place mixture into serving bowl and top with chopped peanuts, lime juice and coriander

This mixture made two decent servings, so double up if more is required. I think the major ingredient that is missing is Tamari but I just replaced it with soy sauce. Other than that it came out pretty damn good.

Tip: Keep an eye on the noddles, I still haven’t mastered how to consistently get them right •

Inspired by the lovely @starinfinitefood - here is my Cashew Pad Thai recipe✨
.• 4 ounces Pad Thai rice noodles
.• 2 tbsp olive oil
.• 1 egg (omit if vegan)
.• 1/2 cup vegetable broth
.• 1 tbsp @georgiagrinders cashew butter
.• 2 tbsp soy sauce
.• 2 tbsp lime juice
.• 2 tbsp packed brown sugar
.• 1/2 tsp ginger, ground (or grated)
.• 1 tsp red chili flakes
.• 1/2 cup bean sprouts
1. Cook noodles as directed on package
2. Heat oil in large skillet over medium-heat. Add egg, cook for about 30 seconds.
3. Stir in cooked noodles and remaining ingredients, except bean sprouts (feel free to add in whatever veggies you like too). Cook and stir until most of the liquid has been absorbed then add bean sprouts.
4. Serve with crushed peanuts and your favorite greens | #thepeachyprodigy
