Cauliflower Rice is one of my favorite ways to sneak more vegetables into your day! It takes just minutes to make from scratch, and you can use it in all sorts of things, from a Cauliflower Tabbouleh Salad, to Fried Rice, or just as a #grainfree side dish for your favorite entree.

I don’t know about you, but I think homemade cauliflower rice tastes better than the pre-riced version you can buy in the refrigerated section at the store. The fresh version doesn’t smell nearly as pungent, and I think the flavor is more mild, too.

That being said, you can FREEZE this rice to use in the future for a fast meal! I use frozen cauliflower rice to save time when I’m making my #lowcarb Cauliflower Pizza Crust, so you don’t have to cook the cauliflower before you get started. It’s such a time saver!

I declared it to be ‘summer of salads’ earlier this year, but to be honest... it didn’t really stick.

I don’t know about you guys but I find myself cooking / eating the same.thing.over.and.over and I am needing something new!
So I found this great recipe for an easy 30 minute Korean beef bowl!
It’s paleo and whole 30 and the whole 9.
Try it! It was super yummy!
2 pounds ground beef (although I used ground turkey to make it leaner)
1 shallot chopped
2 tsp fish sauce
1/2 cup coconut aminos
1 tbsp garlic powder
2 tbsp fresh ginger
1 tbsp onion powder
Brown beef or turkey in a large pan. As meat is cooking, add in ginger, shallots, onion and garlic powder.
Cook meat until no longer pink.
While meat is cooking, cook rice or cauliflower rice of your choice.
Once meat is browned, add fish sauce and coconut aminos. Reduce heat and simmer for 3-4 minutes.
Add your favorite lettuce to the bottom of your bowl (I used romaine), then add a cup of your cooked rice, add meat to the top.
Garnish with a fresh avocado and some spicy mayo!
