. Ash-e Haft Daneh |Persian Seven Bean Ash| This Ash dates back to the #Zoroastrian time. It is cooked on the last month of #Persian year which starts around 20th of February. The name of this Ash is because of the seven beans used in it such as lentils, barley, rice, ... Persians believe that the last month of Persian year is the beginning of re-fertilization so they have lots of #celebrations and one of them is cooking this Ash in the beginning of the that month and they believe that eating this Ash would bring them luck and blessings in the upcoming year. Ash-e Haft Daneh Persian Seven Bean Ash 8 servings •Ingredients: -oil -onions ( I used pre-fried onions ) 2 -dried mint 3 tbsp -turmeric 1 tbsp -chopped parsley, spinach, coriander and chives ( equal parts ) 4 cups -water -mung beans 1/2 cup -yellow split peas 1/2 cup -pearl barely 1/2 cup -rice 1/2 cup -ground ginger 1 tsp -ground coriander seeds 1 tbsp -black pepper -salt -grated tomatoes 1 cup -kidney beans ( I used precooked ) 1 cup -chickpeas ( I used precooked ) 1 cup -lentils ( I used precooked ) 1 cup -whey 1 cup -verjuice 5 tbsp -tomato paste 2 tbsp •Method: •On low heat, add the oil to the pot and fry chopped onions. When golden add the dried mint and after 1 minute add turmeric and mix them. •Add freshly chopped herbs to the pot and add water till the pot is full. •Add mung beans, yellow split peas, barley and rice and let them cook. •Season the Ash with freshly ground ginger, ground coriander seeds, black pepper and salt. •Add the grated tomatoes and put the lid on and cook them for about 20 minutes. •Add the precooked kidney beans, chick peas and lentils. •Add the whey, verjuice ( you can use fresh lemons instead )and tomato paste and let the Ash cook for about 30 minutes on low heat. •Taste the Ash and adjust seasonings and the sourness by adding more verjuice if needed. •Serve the Ash and decorate it with fried onions and whey.
