Taco salad:
Low protein rice
Lettuce
Bell peppers
Jalapeño
Tomato
Onion
Avocado

Will top off with some hot sauce and salsa
The avocado is the highest protein content ingredient here (my fav in moderation) can easily change this up by adding in different ingredients (ex- Jackfruit is a tasty substitute for the rice, also low in protein, different flavor)

100 mg phe for the whole pizza pie ❗️ Buffalo cauliflower pizza with a low phe ranch sauce drizzle. Everyone in my office goes crazy over the Buffalo chicken pizza at our local pizza parlor and of course I had to recreate a low phe version. It is rich in calories and low in phe but so worth it. The flavor combination of salty, creamy ranch sauce and spicy cauliflower is • Roast cauliflower and toss in buffalo sauce. For ranch sauce, mix @followyourheart parmesan crumbles with mayonnaise and add a dash of powdered ranch sauce for the ranch sauce. Add a tablespoon of rice vinegar to thin it out. Next time I want to try with vegan sour cream rather than mayo. •

98 mg phe for this entire bowl In my family it is not a party until the popcorn is flowing. I do not remember my grandfather without his hand in a bowl of popcorn. Now, my dad carries on the tradition and tosses it with popcorn salt in a paper bag so every kernel is perfectly salted. Now you can understand how popcorn is my vice. • Two tablespoons of unpopped kernels makes four cups of popcorn and that goes down far too easily. Those measly two tablespoons of popcorn carry a hefty 196 mg of phe • Therefore, I give you the low phe option: popped tapioca pearls with ZERO milligrams of phe. Pop in oil, the same way as popcorn over the stove. Toss in salt and serve. I mix in one tablespoon of popcorn at the same time when popping and that adds a nice flavor and hearty consistency to total 98 mg for the entire bowl. •

We enjoyed this popcorn when we were “upta camp” in Maine. My dad was so happy to create a low phe option for me (I wasn’t able to share his love for beer due to PKU but now can guilt-free with popcorn). He is seriously so sweet. •

Just got home after nearly a week of travel. My first meal was a big bowl of low pro Alfredo. It has a cauliflower base and is a copycat of @jendellarosa Go over to her profile and check out her delicious low pro meals and learn more about maternal PKU. She has a great blog! Given that the sauce is half cauliflower (a bit chunky because I was just so excited to eat) it’s a touch healthier than the alternative. This was the perfect meal because I needed a low pro binge prior to a finger stick tomorrow morning. We’ll see how it turns out. Although I ate mostly low there were a few drunken munchies (ritz crackers how I do love you) that may skew the level. •
