As we head into canning season one of the questions I get asked the most about is how to store your home canned food.
There's some very specific reasons you should store you jars of home canned goodness without the bands and I outline them in this post (and from someone who cans close to 600 jars a year, it has to do with more than just safety, though that's my primary factor with canning).
Second, jar stacking always comes up right after storing with bands on or off and surprisingly, the info from official sources might surprise you and I share my take and what we practice in our homestead pantry.

Jon and I have developed this language about fermenting, and I only just realized that there’s only a few people who understand what the heck we’re talking about when it comes to producing fermented veggies.
So I want to let you guys in on our fermentation code talk:
When we start a new batch of fermented vegetables, we don’t like to say “we started fermenting ______ today” because we don’t ferment...microbes ferment.
♀️Instead we like to say “puttin’ in.” As in we’re putting raw ingredients into the barrels. We frequently ask each other things daily like: “we puttin’ in today?”... “What we puttin’ in today?” So today we put in some super local, Mississippi cucumbers again and two barrels of our always popular Kimchi! Now we just wait for the microbes to do their thing and ferment the veggies into probiotic super foods.

Welcome Spacemaster! Definitely time to get my pickle game going. Here in zone 10b we have been STUCK in June gloom and it just doesn’t feel like pickle making time. I associate pickling with warm days and bright sun, but will the cucumbers really know the difference? Probably not...... After all, the cucumber plants are producing well and giving our daily salads some welcome crunch. Pickling, preserving, fermenting, bread baking here is the list (and swipe through for some more pics) from the last couple days:
▪️Litres and litres of sauerkraut thanks to @coongalenaview wisdom and swooning over @thefermentary bible- Ginger and turmeric
Lemon and dill
Garlic, ginger, chilli and I can’t remember what else
▪️Preserved lemons - Meyers and Eureka lemons recipe @thefermentary so simple I love it
▪️Lime pickles: So I know this is a quality problem to have but we had so many limes. Thinking I was going to drink enough G&Ts wasn’t really a thorough waste minimising strategy’s so I cut up kilos and frozen them (for G&Ts) and then made this gorgeous lime pickle from @cornersmith Salads and Pickles book. It still has a couple of months to cure before you eat it but I tasted it today wow I think I could just start now. ▪️I’m thinking a stash of cordial too... if you are into @fowlersvacola preserving then their Facebook group, recipes and advice is sensational (I’ve mentioned this one before, DM if you want the details)
▪️Next on the list today was sourdough bread @theshadybaker your starter and detailed recipe is making me very happy. I haven’t been sure what to do with the discarded starter but today we made pizzas bases and that was dinner. Frankie was very impressed and Jane would like you to come visit again ☺️. .
And then to finish the day I finally went through our spices/herbs stashed in the meat safe. They were a total sorry sight after our move and @wide.brim rightly so complained about my incomprehensible labels (is that mixed spice or dark curry powder)- so everything is in Virgo order again now.

Okay now what to do with the glut of oranges . Frankie and I are eating them by the handful but it’s no really making a dent. Does anyone have a preserving/pickling/fermenting solution?
