Tonight for #Whole30in30 I made this Teriyaki Salmon Traybake! It’s an easy one pan meal that’s perfect for weeknight dinner. Roasted asparagus, bok choy, scallions and broccolini are tossed in a homemade teriyaki sauce and topped with salmon before quickly being baked in the oven. Anyway, April is going to be another month of craziness (in the best way possible) for me. So easy meals that can be made ahead of time will be the name of the game. My instant pot is my best friend this week, and easy proteins like @twrgrassfedbeef hotdogs and sausages are my go to. I’m doing a mini Whole30 reset up until my Whole30 recipes takeover on the 22nd because I want to stay sharp and focused with everything happening this month. It’s my way of providing a little self care for myself everyday even when I’m stressed.

Indian spiced chicken with riced veggies I saw this dish the other in a health shop for £11. I thought I could recreate something for at least 1/3 of the price with better ingredients too.

This dish is heavily spiced with Indian flavours with a curry powder + turmeric (the mix contains cumin coriander fenugreek ginger cinnamon - i try to buy organic spices the price difference is marginal and I think being stored potentially for a long period of time in process and store). You could make the mix at home but to save time this is store bought.
The dish requires a yogurt which provides the moisture. I opted for a dairy free alternative using natural flavoured coconut milk with minimal ingredients or use your personal preference.

Ingredients:
• Medium skinless chicken breast
• 1 tbsp curry powder
• 1 tbsp desiccated unsweetened coconut
• 1 tsp coconut oil
• 1 Broccoli - riced using grater
• 1/2 cauliflower - 1/2 riced using grater / the other 1/2 broken into florets
• 50 grams natural flavour Coconut milk yogurt
• 2 garlic cloves - grated
• 2 inch knob of ginger - grated
• 1/2 red onion - grated

Recipe:
1. In a bowl, mix 1/2 the curry powder and desiccated coconut into the chicken. Set aside for 5 minutes.
2. In wide saucepan on medium heat, add 1/2 the oil.
3. Add the broken up cauliflower pieces with 1/2 curry powder and fry off until lightly golden coloured on the outside.
4. Add the grated garlic, ginger, red onion and stir for 2 minutes.
5. Add the grated veggies and stir for a few minutes.
6. In another pan. Heat the remaining oil on medium heat. Add the chicken breast cook on one side for 3-4 minutes.
7. Turn over repeat to other side for 3-4 minutes. I used a thin piece so cooked quickly, check to see if chicken is cooked through if not continue for 2 more minutes each side.
8. Plate all the vegetables on a plate.
9. Add the sliced chicken breast.
10. Dollop the yogurt on top. Use some fresh lime juice and season to taste.

Even if you’re not an eggs' fan, there are so many high protein, lower sugar ways to start your day. A quality protein shake with some healthy fats & greens, greek yogurt with fruit or even a clean protein bar are some examples.

When it comes to fruit, eating fruit is a much better low calorie and high fiber option. While you could easily drink 11.5 oz of orange juice, you most likely would not eat 3.5 oranges in one sitting (the equivalent in calorie amount).
