Continuing with the puff pastry theme.. the best puff pastry filling ever! Tofu & spinach ricotta rolls you can make as much as you’d like but I promise you they won’t last You can find the video of how I make these in my highlights.

RECIPE:
.
1 block of firm tofu (375g)
300g baby spinach
2 cloves garlic, minced
2 tbsp savoury yeast flakes
1 tbsp olive oil
6 sheets puff pastry, thawed
Salt & pepper
Sesame seeds to sprinkle on top
.
1️⃣ Cook the spinach in a pan first until wilted & transfer to bowl. Crumble the tofu with your hands and add the other ingredients.
2️⃣ Mix thoroughly - I like to add it all to my blender and mix for about 10 seconds
3️⃣ Preheat oven to 200°C
4️⃣ Cut puff pastry sheets in half lengthways and spoon mixture in a long line, partly off centre closer to the left. Brush edges with water
5️⃣ Fold the pastry over the filling and roll to seal (video of this in my highlights) cut them in half and make small cuts on top
6️⃣ place on a lined tray and brush the tops with water, sprinkle with sesame seeds and bake for 20 mins at 200°C until tops are golden ✨
Mother’s Day is in 9 days and what I truly want is to have a me, myself and Netflix day!
But I’m being realistic so I’ll just ask for Canon 105mm ... #justsaying

ИНГРЕДИЕНТЫ:
2 листа замороженного слоеного теста ⠀
50-100 гр ореховой пасты или любой начинки на выбор (например шоколад или джем)

ЯИЧНАЯ СМЕСЬ: ⠀
1 яичный желток ⠀
1 столовая ложка молока
⠀
ШАГИ: ⠀
Разогреть духовку до 200 градусов.
В миске взбейте яичный желток и молоко.
Распределите начинку на один из листов теста и положите другой лист теста сверху. Вырежьте тело рыбки и используя один из лишних треугольников для хвоста. Разрежьте по 7 разрезов с каждой стороны и скрутите в полоски. Используйте верхнюю часть ножа, чтобы сделать метки на области хвоста, и используйте лишнее тесто, чтобы добавить глазки, рот и плавники. ⠀
Смажьте рыбку смесью яиц и запекайте в течение 15 минут, пока она не поднимется и не станет золотистой.

Winding Tarte Tatin

INGREDIENTS:
2 puff pastry sheets
4 tablespoons cinnamon sugar
8 apples, peeled and cut into eighths
2 tablespoons butter
1 cup sugar
ICING:
3/4 cup powdered sugar
1 1/2 tablespoons milk
STEPS:
To make the icing, combine the powdered sugar and milk.
Sprinkle cinnamon sugar on 2 puff pastry sheets, and then roll them up. Cool in refrigerator for 10 minutes, and then cut into round slices. Arrange slices in a circular pattern on parchment paper and cover with another sheet of parchment. Use a rolling pin to flatten. Cut pastry sheet into a circle that will fit in the bottom of a round cake pan. Repeat, reserving the second pastry circle for the top.
In a frying pan, add butter and sugar. Heat and mix until caramelized. Add the apples, cover with a lid and heat for 2 minutes, then flip them. Cover with the lid and cook until apples are soft. Allow to cool.
Lay apples on top of the pastry circle, then top with the other pastry circle.
Bake at 400 degrees for 30 minutes.
Cut into pieces and drizzle with icing before serving.
