And my trusted recipe :
300 g flour, 225 g water, 60g levain 100%, 7g salt.
Levain built 3 hours ahead 1:1:1.
Autolyse 2 hours, 4-5 folds+1 lamination.
Total bulk 5-6 hours at 23c, cold proof at 4-5c 12-18 hours.
Preheat 250c with pizza steel. bake first 20mins with a stainless steel mixing bowl covers the dough, then remove the bowl, lower temperature to 225c, bake till desire colour, about 20 minutes.
First take: Ciabatta 76% hydration mix flours: 25% Tipo 00 and Organic Bread flour By KA using Pandan levain and black toasted sesame seeds. I wish I can transfer the smell and flavor is out of the planet!! it's a keeper. Baked on granite stone with lava rocks
