Tiramisu cheesecake brownie gifted from @bakestarters
They offer two variants in the recipe - fudgy or cakey brownie. I chose to do the cakey version as cream cheese is already quite rich. Very happy with how the brownies turned out.

Gula Melaka sponge cake + purple sweet potato (ube) with pandan infused coconut milk whipped cream + toasted grated coconut.

Been wanting to try a local Orh Nee (taro paste) inspired cake for some time, but with purple sweet potato instead. The deep purple hue is just too enticing!

My cake is not sweet at all (which I like) so add sugar accordingly as you wish.

Recipe (For 8 inch cake):
130g plain flour
4 eggs, room temperature
100g gula melaka (dry chopped to bits)
2 tbsp coconut oil
1 tsp vanilla extract
Whisk egg and gula melaka on high until double in volume and leave ribbon like trail when lifted.
Fold in sifted flour, vanilla extract and oil.
Bake at 170 C for 30 mins.

Mousse:
400g Vietnamese purple sweet potato (steam and remove skin)
1 tbsp purple sweet potato powder
2 egg yolks
250g coconut milk (simmer with bunch of pandan leaf)
1 tsp gelatin powder + 2 tbsp lukewarm water (mix well)
500ml heavy whipping cream + 1 tbsp fine sugar
Blend everything and fold to incorporate whipped cream. Mousse will firm up after being refrigerated.
